beans and rice are a heavy food and it takes a while for the seasoning to soak all the way through. But when it does look out!!

Actually, it is a mis-conception that the food tastes better the next day...it will taste better the same day if you cool and then reheat the food. The flavors "bloom," if you will, in the process of cooling and then reheating. It's just that most of us experience that in a two day process. In the restaurant I actually have the prep staff prepare cooked composite (multi-ingredient) products early enough that we have time to chill and then reheat the products before lunch with the same effect, better taste.
I have amazed many of my staff with having them do a before-cooling and after-reheating taste test.
