Italian Meatballs and Spaghetti
Ingredients
(8 servings)
1 lb Ground meat
2 tb Plain dry bread crumbs
1 Egg
1/2 c Chopped onion
1 tb Vegetable oil
1 cn (15oz) tomato sauce
1 cn (14.5oz) whole tomatoes undrained and crushed
1 tb Grated parmesan cheese
1/2 ts Salt
1/2 ts Pepper
1 cn (6oz) tomato paste
1 1/2 ts Basil
1 1/2 ts Sugar
1/2 ts Garlic powder
1/2 ts Oregano
2 tb Grated parmesan cheese
Hot cooked spaghetti
Instructions
In bowl, combine ground beef, bread crumbs and egg. Shape into 20 1-1/2" balls; place on baking sheet. Bake at 375° for 25 mins; drain. In large saucepan, saute onions in oil until tender. Stir in remaining ingredients except cheese and spaghetti. Simmer while meatballs bake. Add drained meatballs to pan; simmer, covered, an additional 20 mins. Stir in cheese and serve over spaghetti.

I buy the frozen meatballs at the grocery, sauce in the bottle, and spaghetti from a box. They never know, it tastes as good as the Italian restaurant I go to.I have tried the premium brands of spaghetti sauce, the cheap stuff tastes just as good. I would buy real Parmesan and grate it at the table for a flourish.
I buy the store brand of garlic bread, and add mozzarella and Parmesan on top. Make a salad
And don't forget the gelato for dessert.

Meatballs: 2 pounds of ground beef, about 1 1/2 c. bread crumbs, 2 eggs, dash of basil and garlic powder. 1/4 cup diced red peppers and onion (combined). Mix all together, and roll into small balls. Brown in large fry pan, moving around only slightly with a fork until crispy and brown on all sides, usually only about 5-10 minutes.
Sauce: Put some olive oil in the bottom of a large pan. Add 1/4 cup onion chopped and 1 clove chopped garlic. Allow to cook down slightly. Then add three cans of crushed tomatoes (lg) and two small cans of tomato paste. Add meatballs to finish cooking. Let simmer for 2 hours. Before serving add fresh basil and oregano.
Very easy, but delicious.

Meat Sauce for Lasagne or Spaghetti
1 1/2 lb Ground Beef
1 lg Onion, chopped
2 cloves Garlic, minced
1/2 cup Celery, chopped
1/4 cup chopped Parsley
1/2 cup Mushrooms
1 can Tomatoes
1 can Tomato Sauce
1/3 cup Tomato Paste
2 tsp Sugar
1 tsp Basil
3/4 tsp Salt
1/2 tsp dried Oregano
1/8 tsp Pepper
Brown beef, add onions, garlic, celery and mushrooms. Sauté until golden brown. Add remaining ingredients and simmer for approximately 1 hour. Serve over spaghetti noodles.

I like my spaghetti sauce to have a rich tomato flavor with a lot of vegetables in it. I sautee my veggies and sausages, meatballs in your case. Then I add a can of tamato paste and cook that in the pan with the meat and veggies. Once everything is sauteed I deglaze with red wine and reduce by 1/2 to 2/3 then add the tamato sauce and a tbsp. of sugar to cut the acidity. Not everyone likes my spaghetti but it is nutritious and very tasty to me and my family. I use veggies like onion, garlic, mushrooms, zucchini, yellow squash, olives, and tomatoes. Use herbs like rosemary, thyme, oregano, and fesh basil. I also like to add fennel seeds if it is going to be meatless because that is the seed found in most Italian sausages. Sometimes instead of using traditional pasta I use a spaghettis squash. Just cut and seed it like you would any large squash and then cover with plastic film and cook it in the microwave for 7-10 minutes. Use a fork to scrape out the flesh and it comes out stringy just like angel hair pasta. I have little flavor so the dish tastes like your sauce just like regular pasta. This is a very healthy way to serve spaghetti without all the extra carbs from pasta.

THIS IS MY GRANDFATHERS RECIPE!
Sauce:
1 med. onion finely minced
5 Italian sausages
2 pounds hamburger
1 can tomato paste
3 cans crushed tomatoes
1 tablespoon salt
1 teaspoon pepper
1 teaspoon garlic powder
2 tablespoons brown sugar
1 teaspoon crushed pepper
Meat Balls:
4 pounds hamburger
3/4 cup Italian bread crumbs
2 eggs
1 teaspoon powdered garlic
3/4 cup grated Romano cheese
Saute onions and sauages until sauage is brown. Add 3 pounds hamburger; cook until brown. Add tomato paste, tomato, salt, pepper crushed pepper, garlic, brown sugar. Cook on simmer for two hours. Then add meatballs.
Mix the ingredents for meatballs together well, make into golf ball sized meatballs.
Place in oven proof dish and bake at 350 for 35 to 40 minutes.
Drain and add to sauce or freese for later use.
