Because they like the other so badly they're afraid they might do something stupid. Thus, by holding themselves back they try to prevent it. You must be quite a catch!!!

Because one the intimacy begins that is when you truly know if you have chemistry and all your fears of the other person not being interested come right out. You know that they made a decision the minute they kissed you if you are gonna be long term or not and if you guys have the right chemistry that is why. It also nerve racking for some to have romantic encounters because they are not people that do it often and need some reassurance.
