I took out some boneless, skinless chicken breasts for dinner and I don't know what to do with them. It's really hot here (110+ degrees) so if I don't have to, I don't want to turn on the oven. Ideas?

Chop them up into bite sized pieces and sprinkle garlic or some other seasoning on them. Then put them into a frying pan (no oil) and cook until white on inside and hot, you can serve this with any kind of pasta.

Try this on the BBQ( or skillet if you want to stay in the Aircon)

Marinade in

2 tbsp white wine vinegar
2 tbsp lemon juice
3 tsp chopped rosemary
2 garlic cloves
1/2 cup olive oil

Whisk and combine until a little thick . Pour over chicken cover and chill for 2 hours. Remember to remove chicken from marinade to avoid huge flames. Serve with salad . Could not be easier .

Lemon-Pepper Chicken

2 Chicken Breasts, halved
1/2 cup Worcestershire
1/2 cup Lemon Juice
1/2 cup Water
2-3 tbs. Lemon-Pepper Seasoning
Salt and Pepper to taste
1 lg Onion, sliced
Parsley

Place chicken breasts in dish, top with onion rings. Combine lemon juice, Worcestershire sauce and water. Pour over chicken and onions. Sprinkle parsley and lemon-pepper seasoning over all. Cover and bake at 350 degrees for 1 hour. OR..... Cover with plastic wrap and bake in the Microwave for 30-35 minutes..... extremely easy and good and quick.

You can cut your chicken into strips. Get a little olive oil and put in a skillet, heat it up and drop your chicken in there with some salt and pepper, a chopped onion and a bell pepper and just stir fry it till it's done. Serve with a chilled wine or beer and enjoy.

Cook them on a skillet. It heats faster and cools off quicker than the oven. Cut them into strips, and they'll cook even faster. Make some Mac N Cheese with it, and you're all set.

Grill it, after marinating in Italian Dressing in a plastic bag for a couple of hours. Then throw it on the grill or cook it in a pan. Super simple.

I grill outside when it's hot, put the grill in a shaded area and check it only once in a while. Kitchen stays cool and no clean up
