You will need: Chicken,
cream of mushroom / celery/ tomato / or chicken soup (you choose)
your potatoes
some grated cheese (optional)

Bake chicken at 425 for 20 minutes, then add the soup over the top of the chicken. Evenly spread the mashed potatoes over the top of the chicken / soup mix. If the mashed potatoes are too thick from being refrigerated try nuking them for a second or two.
Top with grated cheese of your choice.
Bake till the potatoes at the edge of the pan are browned and the chicken mixture is bubbling. Usually 25 minutes at 425.

I like this one because everything is all in the same pan, less dishes for my husband to do.

Sheperd's Pie

Ingredients:

2 -3 lbs Hamburger Meat (lean) Or Ground Turkey

1 med Onion

2 stalks Celery

1/2 Green Pepper (1 whole pepper if small.

5 cups Mashed Potatoes

1 can 12 oz Tomato Paste

12 oz Cheddar/ or American Cheese

1 tsp Garlic

1 tsp Onion Powder

1-1/2 tsp Oregano

Salt and Pepper to taste

1/4 cup water

Preparation Time:Appox 45 min
Directions:

Step 1 ...Cut up your celery and onion in bite size pieces, saute in a little oil, until onion is translucent. Remove vegetables, add hamburger and cook until done. (If you are using Ground Turkey add directly to the pan of celery and onion and pepper, cook until done, no need to drain).

Drain grease and return hamburger to pan with the celery and onion. Add all your spices and 1/4 cup water. Let simmer 10 minutes. Add your tomato paste mixing well.

Step 2 ..Instant potato's work best with this recipe since it is a quick meal for an entire family. Make your potato's according to the directions, approximate 5 cups. (For added flavor to your potatoes, add some onion powder, salt and pepper, or what ever spices you like. (A TBL of mayonaise will make them rich in flavor and very few know why your potato's are so great!)

In a casserole dish place the meat mixture on the bottom, cover with potatoes and top with the cheese.

Bake on 350 degree's for 20 minutes. Or you may put in microwave to a few minutes to melt the cheese!

Careful: will be hot!!

Hint: Better made the day before or make and freeze for another night.

My husband loves this! He can eat the whole thing himself!


1 lb ground beef
1 small onion
1 can tomatoe soup
1 can french cut green beans (drained)
2 c (approx) Mashed Potatoes
Seasoning Salt

Heat oven to 350.

Brown ground beef and onion in skillet. Drain fat.
Add tomatoe soup and green beans.
Stir.
Spray casserole dish (8X8 or 9 in. glass pie pan) with cooking spray.
Pour mixture into pan.

Heat mashed potatoes (or make fresh) in order to spread. They should be pretty thin, if they are too thick, they won't spread. Add milk until they are creamy consistancy. (Not too thin!)

Spread mashed potatoes over the top of the soup mixture.

Sprinkle seasoning salt on top.

Place casserole on cookie sheet.

Bake 20 minutes.

My mom used to cut a hot dog almost in half and open it up, put a mound of mashed potatoes along the top, and top that with some american cheese. Then bake it in the oven til it's warmed all the way through and the cheese is nicely melted. It sounds wierd but it's really good, fast and easy. Enjoy if you try it!!!

I find that using a Shepherds pie recipe with any left over especially mashed potatoes is good.

This is a pretty secret recipe...You take the mashed potatoes, you put them in the microwave, and heat them until their warm, and then you eat them. I call it...leftover mashed potatoes..

make potato cakes
to about 3 cups of cold mashed potatoes add 1 beaten egg, 2 tablespoons flour, salt, pepper, (other seasonings if you desire)
mix together and shape into "pancake thickness", fry in small amount of oil. Cooks quick.

Potato cakes. Forget the eggs. We just put in enough flour, maybe a couple of tablespoons, depending on how many potatoes you have, and some pepper. Shape into patties and fry in a small amout of oil. They are great.

I agree with Alex , Shepard's pie is great , it's like a Chicken Pot Pie , but you put the Mashed Potatoes on the top instead of crust ,and then you bake it .

Potato Soup

Heat the potatoes on the stove
Add:
2 cups of milk
1- 2 tablespoon of chicken bullion
3 tablespoons of either minced onion or, dried onion
3 teaspoons of garlic powder

Stir on medium heat

*You can add chicken if you want
