BBQ fresh ham. Rub it with spices and smoke it until the outside is crispy and black and the inside is cooked (2 1/2 hours). Then transfer to a covered and sealed pot and bake at 300 degree fahrenheit until it falls apart (3 more hours). It can make a grown man cry and a woman swoon!

As far as traditional steaks go... Filet Minon is the best cut of beef you can get... extremely tender!

I personally enjoy grilled seafood with white wine, butter and garlic... Salmon, Shark, Swordfish, Mahi or Lobster. Grilled seafood is delicious served with grilled veggies too... Eggplant, Zucchini, Summer Squash and Artichokes drizzled with olive oil, balsamic vinegar and sprinkled with Herbs de Provence.

Chicken Wings!!!!!! My favourite item for BBQ, the next one is beef steak with my homemade Korean BBQ sauce

We usually organize BBQ party for 15 up persons, yes .. big family here in Hong Kong!

We marinate, Pork Chop, Beef tenderloin, Chicken Wings 1 night ahead before the party.

The popular items in our parties are:

Chicken Wings (marinated with soy sauce, sugar, ginger, garlic, cooking wine, corn starch for more than 10 hours)
Eel (BBQ with Japanese uragi kapayaki sause)
Cheese cocktail mini sausages
Fishballs / Cutterfish meat balls
Sweet corns or Sweet potatoes (wrapped with foil)
Button mushrooms (wrapped in the foil with butter and salt)
Marshmarrows

<<<<<<<<< Korean BBQ Sauce >>>>>>>

1000 cc Soy Sauce (preferrable organic ones)
80 g cane sugar (you can adjust the sweetness)
80 cc Japanese Sake
50 cc Milin (Japanese cooking wine)
200 cc Red wine
60 cc Sesame Oil
20+ cloves of garlic
30 g whole black pepper (you may add more during the BBQ)

1) Heat the soy sauce in a pot, bring to boiled, then leave it to cool

2) Desolve sugar into the soy sauce when it's still a bit warm

3) Put the soy sauce, japanese sake, japanese milin, garlic, black pepper into a blender, blend well then pour into a jar

4) Pour the red wine and sesame oil into the mixture and shake it

Rub this BBQ sauce on the steak / chicken thighs, or simiply just soak your meat in the sauce for 3 to 5 mins before you BBQ the meat. Sprinkle black pepper / It tastes wonderful.

a big ol bone-in rib eye steak, marinated for about 24 hours in just about any marinade you prefer. I like the Basque Norte brand of marinade, but have whipped up alot of different home made types also that work just great...

You may have trouble believing this...
But OSTRICH STEAKS are out of this world grilled on the barbecue!
Cut them thick... They are better than a T-Bone!

pig ribs. but if you want the best ribs in the world, you'd have to go to Corky's in Memphis or order some. that is the best barbecue i've had in my life

that would have to be ribs... rubbed with pepper before cooking slow cooked over 6 hours or so and basted with vinegar (to tenderize) during cooking then the sauce put on at the last so it doesn't burn......yummm! My Dad makes them that way.
