Low Carb Quick Chocolate Almond Ice Cream
Recipe courtesy George Stella
.Recipe Summary
I. Prep Time: 15 minutesCook Time: 7 minutes
Inactive Prep Time: 2 hours Yield: 4 servings * Nutrition Info: Low Carb 2 tablespoons sliced almonds 1 cup heavy cream
1/2 cup sugar substitute (recommended: Splenda) 1 teaspoon no sugar added vanilla extract 1/8 teaspoon no sugar added almond extract
1 tablespoon unsweetened cocoa powder
2 tablespoons whole milk ricotta cheese Preheat oven to 350 degrees F.
Spread almonds out on a sheet pan and bake for about 5 to 7 minutes until just golden brown. (Watch them carefully as they can burn easily.) Remove and cool.
With an electric mixer on high, whip the heavy cream in a bowl just until frothy and add in the sugar substitute, extracts, cocoa powder, and ricotta cheese. Continue to whip on high until peaks form. Be careful not to over-whip, or cream will break.
Fold in toasted almonds. Using a 3-ounce ice cream scoop, place 1 scoop each in a champagne glass and freeze as "faux" ice cream or serve refrigerated as a parfait. If desired, garnish with low carb whipped cream, toasted almonds, a strawberry fan, cocoa powder, and a sprig of fresh mint.

I am writing to tell you what an incredible impact these methods had on my life! I have had type 2 diabetes for 27 years. For me, the worst part of this horrible disease is the severe pain I constantly get in my feet. The pain is so bad that I avoid standing and walking as much as possible. I've got to tell you that within the first month, my feet stopped hurting altogether and I can now walk totally pain free.
Believe it or not, I even danced at my niece's wedding last month, something I have not done in a many years. I've been following the book for six months now and my blood sugar is well within normal range. I feel great!
I recommend you use the Type 2 Diabetes Destroyer to naturally reverse your diabetes.

JELLO DESSERT
1 pkg large sugar free jello, any flavor
coolwhip
fresh fruit
Make the jello as on the package but use 1/2 cup less water.
Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 4-6 hours. Mix up the jello and add 1/4 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.
Put the mix in a glass, and top with more fresh fruit or coolwhip.

Any desert you make will have calories, yummy or not, if it has calories, it is the same as any other desert. A type 1 diabetic can control this with medication so can eat anything. A type 2 must watch what he eats a little more careful. I have been a diabetic 31 years and have been able to ignore desert most times why bother?

I once made this desert - I bought wafer cups, like the ones you use for ice-cream. Whipped up some sugar-free angel delight (or you can use sugar-free yogurt) and topped up with strawberries, sprinkled crushed nuts and a slice of star-fruit. Obviously, has the fructose of the fruit in it so make sure the diabetic can eat fruit (usually not a prob, but I like to be sure). Also, a fruit salad is good if the person can eat fruit. If not - I'm sorry but cheese and water-crackers! (read the ingredients on the box and get sugar-free ones).

INSULIN INJECTIONS ARE NOT PAINFUL UNLESS ONE IS HITTING THE MUSCLE! Huge dose is not required either! I will be eating half a normal serving of a dessert, but foregoing the potatoes, dressing and peas and carrots. The sheet cake ala grandma is a great suggestion, but with lots of butter and nuts in it. Use cream, butter and load it with pecans!! My Endo said to never crave anything, especially at birthday parties and special occasions, but to have half a normal serving and to make sure that chocolate cake had lots of fats and nuts in it to mitigate the grams of carb. Actually you can cut the sugar called for in half, but not the flour!! That is the sticking place. So I adjust my thoughts on what to eat in the main meal and cut out all unnecessary carb grams such as the potatoes, dressing, starchy veggies such as peas and carrots, and have salad, meat, green veggies like beans, and keep the serving sizes to a minimum so I can have that cake or pecan pie!! The real ones, not the "diabetic" ones that are so horrid.
