In the reading that I have done (by people who are trying to copy Guinness), it seems that the distinctive flavor comes from slightly soured (not spoiled) beer that they create from the previous batch.
Putting meat into beer would be counterproductive, since the additional protein would just make it cloudy, and then they would have to filter it to get the protein out. Kind of a waste of time, don't you think?

Guinness is not made with meat, however, one bottle of guiness can be so heavy, it might as well be a meal. It has tons of calories right? I remember one time I got off work late, and i went straight to the bar to meet my friends. I was excited to go out, but 1 problem: I was starving. I could postponed the night even further, and gotten some food...but it hit me...1 guiness before everything else, and i'll be fine.

--It is against the law to add meat to beers and ales in Ireland. They maybe brewing meat in the barrels to derive a taste for the storage phase, but it is not in Guiness beer. However in China there is a beer that is made with chicken. I tried it and it is absolutely disgusting.
