Irish Cream Truffle Fudge

INGREDIENTS:
3 cups semisweet chocolate chips
1 cup white chocolate chips
1/4 cup butter
3 cups confectioners' sugar
1 cup Irish cream liqueur
1 1/2 cups chopped nuts

1 cup semisweet chocolate chips
1/2 cup white chocolate chips
4 tablespoons Irish cream liqueur
2 tablespoons butter

DIRECTIONS:
Butter a 8x8 inch pan.
In the top half of a double boiler melt the 3 cups semisweet chocolate chips, 1 cup white chocolate chips and 1/4 cup butter until soft enough to stir.
Stir in the confectioner's sugar and Irish cream until mixture is smooth. Stir in nuts. Place mixture in the prepared pan and lay a sheet of plastic wrap over top; press and smooth top down.
In the top half of a double boiler melt remaining chocolates until soft. Remove from heat and with a fork beat in the butter and Irish cream until smooth. Spread topping over cooled fudge with a knife. If a smooth top is important place plastic wrap over the top. Refrigerate until firm, 1 to 2 hours at least. This fudge can be easily frozen.

Irresistible Irish Soda Bread


INGREDIENTS:
3 cups all-purpose flour
1 tablespoon baking powder
1/3 cup white sugar
1 teaspoon salt
1 teaspoon baking soda
1 egg, lightly beaten
2 cups buttermilk
1/4 cup butter, melted

DIRECTIONS:
Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 inch loaf pan.
Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.
Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.

Irish Soda Bread

Ingredients:

1 ½ c. White flour
1 c. Whole wheat flour
½ c. Regular Oats
2 c. Buttermilk
1 tbl. Baking soda
½ tsp. Bextarter (only in Ireland) - can substitute cream of tartar
2 tsp. Sugar
2 tsp. Margarine
½ tsp. Salt

Procedure:

Use 9 inch round pans and pre-heat in oven. A one-litre container of buttermilk is just right for two breads so make two, repeating the process below for the second one. Do not attempt to double up the quantities for two – that’s not the Irish way to successfully make this gourmet bread delight!

Four Crooks (yes, it’s Irish) - also referred to as a mam - one Crook = 3 ounces of white flour-total 12 ounces. Sieve in one level tablespoon of baking soda and one half of Bextarter. Add a pinch of salt. Add two teaspoons of sugar, three Crooks (9 ounces) of whole wheat flour, one Crook (3 ounces) of oats. Mix all the above very well in a bowl. Add two teaspoons (2 ounces) of margarine. Mix margarine and rub into previous mix.

Add buttermilk slowly mix it in well, kneading the mix as you add the buttermilk. Texture of mix should be consistent and moderately wet- if it is too dry add more buttermilk, if it gets too wet add some white flour. Grease heated pan with margarine and dust with flour. Pour mix into the heated pan and flatten it out in pan. Hint - use knuckles and dust them with flour so mix does not stick to hands. Make an X in the dough-four quadrants - and poke two or three holes in each of the four quadrants. Bake 40 minutes at 200 degrees centigrade and voila! Remove the bread from the pan by tapping the pan, and let it cool before attempting to cut. Clean up the mess you made - this is the worst job - but worth the effort as the bread is AWESOME!!

Corned Beef with Potatoes and Cabbage.

Place Beef in lg oven safe pot, place lg washed potatoes on top (about 6-8), Take a lg head of green Cabbage and cut into 6 wedges. Salt & Pepper and bake (covered) at 350 for a couple of hours. I also add little Yellow Hots (HOT little chilis) for extra spice since I think the regular version is bland.
