Otsego took my first answer, so how about this:

Warm the Pork Loin, melt cheese and top with rich Apple Butter. You will need a hearty bread though (or roll) - not regular sandwich type.

try spiced apple rings, or baked apple, how about mixing a little apple sauce in mayo with a little cayenne pepper mixed in...
