A modified choke is best for anything that you'll be shooting at 30 to 45 yards. Modified is right in the middle of the choke options, with super full being the tightest and cylinder (the equivilent to no choke) being the widest spread. A lot of people use modified to hunt ducks and pheasants since it's so versatile. If a shotgun is going to come from the factory with only one choke, they provide the modified. When in doubt, use it. That's a very short answer for what could take days of typing to explain. Hope it helps!
PS... Never shoot a shotgun without any choke installed, you'll ruin the threads it screws into and the gun.

JasonK is correct, but he did not mention that steel shot patterns best in a modified choke (Which is why most waterfowlers use it) In the old days of lead shot full choke was the choice for ducks and geese because it gave a nice tight pattern and extended your kill range. Shoot steel shot out of a full choke and odds are you will have tons of holes in your pattern. The best advice is to test shoot the loads that you intend to use in the field, with various chokes. Draw a 30 inch circle on a piece of cardboard or paper and shoot from 30 yards. Take a look at the different patterns and the choice will be clear. By the way I shoot a modified choke for rabbits in moderate to heavy cover, pheasants, ducks etc

Look at the different chokes down the tube, the smaller the diameter of the choke (inside) the tighter the pattern will be.
The wider or bigger inside diameter of the choke the wider the spread pattern will be.
Chokes are great for hunting mostly or for intruders at longer or shorter engagement ranges.
