you could make a trifle. bake brownies, make pudding, thaw cool whip, cut up fruit such as strawberries, raspberries, bluberries whatever he likes. cut the brownies into bite size pieces then layer all the things in a glass bowl.
something like brownies, pudding, fruit, cool whip, repeat. it's yummy, and very easy if you have stuff on hand!

Key Lime Margarita Pie
Yield 10 servings
-1 ¼ C crushed pretzels
-1/4 C. sugar
-6 T. butter or margarine, melted
-1 can (14 oz.) sweetened condensed milk
-1/2 C. lime juice
-1 envelope Kool-Aid Lemon Lime Unsweetened Soft Drink Mix
-1 tub Cool Whip, thawed and divided
Mix crushed pretzels, sugar and butter. Press firmly onto bottom and up side of 9-inch pie plate. Refrigerate until ready to fill.
Combine condensed milk, lime juice and Kool-Aid in a large bowl until well blended. Remove ½ C. whipped topping; set aside. Gently stir in remaining 2 ½ C. whipped topping. Pour into crust.
Freeze 6 hours or overnight. Let stand at room temperature 15 minutes or until pie can be cut easily. Garnish with reserved topping before serving. Store any leftover pie in the freezer.
Prep time: 15 minutes
Total time: 6 hours 15 minutes

How about a Boston Cream Trifle?
Bake a white or yellow cake.
Make 2 pkgs instant vanilla pudding.
1 Can chocolate fudge frosting
After the cake cooks break it into pieces and put into a large trifle dish or a clear glass serving bowl. Alternate layers of cake and pudding drizzling melted chocolate fudge frosting over the top. Sprinkle the top with colored sprinkles. Chill for a couple of hours and serve.

Well it will be an opinion only of course but who doesn't like cheese cake? You can bake or do Jello brand easy to do. You can write happy birthday on it and add fruit to it last and if you use jello the recipe is on the box. Problem solved. Have a good one.

Try these they are delicious and easy to make. What is there not to like about Sopaipillas?
Sopaipillas
2 c. flour
3 tsp. baking powder
½ tsp. salt
1 tbl. shortening
½ c. warm water
Sift together dry ingredients. Cut in shortening until mixture resembles cornmeal. Gradually add water, stirring mixture with a fork. Dough will be crumbly. Turn dough out on lightly floured surface; knead until smooth ball is formed. Divide in half; let stand for 10 minutes. Roll each half to 10”x12” rectangle and 1/8” thick. Cut in 3” squares. Fry 3 or 4 squares at a time in deep hot fat at 400° for about 30 seconds on each side. Drain on paper towels. Serve warm with honey and powdered sugar or cinnamon and sugar. Can be filled with fruit pie filling or jam.

If your Dad likes ice cream and not cake, you could buy an ice cream cake. It's basically ice cream with some crunchy chocolate bits. Does he like cookies? You could make a big chocolate chip cookie in a pan and make it a cookie cake. The malls around here used to sell them. Hope Dad has a special day.

make him a pudding pie. my grandfather requests them every year instead of cake. just buy a pre-made pie shell and some jello instant pudding in the flavor of your dad's preference. mix the pudding, pour it into the pie shell and refrigerate until done. serve with ice cream, cool whip, or coffee.
