OMG! I had to go through 16 recipes before I found one that actually said how much Peanut Butter! Don't people realize a jar (or can?) of peanut butter ranges from 8-48oz?!

Title: Peanut Butter Potato Candy
Yield: 1 Serving

Ingredients

1 c hot mashed potatoes
1/4 ts salt
3 lb powdered sugar
1 lb peanut butter

Instructions

Mix potatoes, salt & powdered sugar. Roll out into a rectangle (like
cookie dough). Smear with peanut butter. Roll up and cut into finger
sized pieces.

This one had a good rating

Well you need one medium potato boiled fairly soft and one big bag of confections sugar and a jar of peanut butter. mash the potato with a fork really well and start adding the sugar till it starts getting a little stiff. On wax paper or a marble board... put some sugar down and place the potato mixture on the board and sugar and keep kneading until you are able to roll out like a pie crust basically. spread peanut butter through the middle and roll up like a jelly roll. Wrap wax paper or saran wrap around it and let chill in the fridge for a couple hours and then slice into pieces. Put in air tight container. Pretty simple really. Have a good one:-)

I have one called Potato Kisses

It doesn't have peanut butter in it.

2/3 cup mashed hot potatoes
2 tsp. melted butter
1 lb icing sugar
2 1/2 tbsp cocoa
1 tsp vanilla
dash of salt
1/2 lb coconut

Beat well mashed potatoes to remove all lumps.
beat in melted butter. Add sugar and beat until
thoroughly blended. Mix in vanilla, salt and
coconut. Drop by teaspoonfuls on a waxed
paper. To harden, place in refrigerator for a
short time. makes about 2 lbs.

Try this one and see if you like it. Enjoy.
It is really a great treat.
