Why don't you take her on a hot air balloon ride, or skydiving. They both are different, and people don't do those things that often, they in the night time take to an expensive restaurant.

Hand make a card with a poem that you come up with that tells her how you feel. Take her to HER favorite place to eat (after all it is her day). Take her to do something that SHE likes to do. Then later plan a walk and talk somewhere that is special. I don't know if you two are intimate, but, The best thing is to lay out a pallet of blankets and sprinkle rose petals all over and around it, surround it with candles and have a radio with your song or a love song that reminds you of each other. You can do this in a remote area outside or even at home. Make love to her on the pallet while the song is playing. It is better with scented candles. You can also make a trail of rose petals to where you act like you don't know what is going on and follow them to the pallet. Afterwards, give her the card/poem and spend time talking. It is her day, do your part to make it special and keep it her day.

Make sure she spends the night with you the day before, so you can start off first thing in the morning. then start with
1. getting up and fixing her breakfast, something easy enough to be eaten in bed and for both of you. A platter you can lay on the bed helps with that.
2. Secret notes around the house prior to this, where she'll stumble over them. Silly love poems, one liners that tell her she's wanted. Make sure she knows how many there are to find, she'll enjoy the hunt. Reward her with middle of the day sex when all are found.
3. Take her out for her favorite meal, dinner
4. Take her out for her favorite activity
5. Bring her home and give her a card that says she's won several hours of body worship. Start at her toes and work your way up, several times. Make sure there are flowers and candles in the bedroom.

The day needs to start at noon. Go to a SPA and let them do the works on her and them top the afternoon off with a couples hot stone massage, with champagne and cheese. Relax and then go out for a romantic dinner. Then retire to your place for a little erotic sex. A little preparation is needed so while she is at the SPA go pick up roses and put in a vase near the bed, buy some rose incense then go join her at the hot stone massage. When you finally return go to the bedroom and tear the roses pedals off the stems and put them all over the bed and then light the incense. Talk to her boss and get her the day off from work, then set up a surprise spa day. The works - facial, massage, mani/pedi, etc. Then take her somewhere she's been wanting to go but hasn't - whether it's a restaurant, a film, a show. You know her best. Do things for her she wouldn't do for herself, and don't make her have to think about it at all. That's the best kind of gift, I think.

Buy one of those photo albums that you put a picture on the front of, get a snapshot of both of you, and write a nice little letter to her about how the rest of the times you share together should fill the album with your memories.

haha. Dude, anything you get your girlfriend will make her very happy. Jewelery, Roses, it's really nice to get, but sentiment works best. A nice movie, some time under the stars. Stuff that makes memories. Best of luck.
