It seems to take an awful long time for my kitchen aid to mix whole wheat dough properly. The manual says its just a couple of minutes, but I knead for like 20, and the dough still is barely pliable. I don't want to add too much flour, too early, because I know that whole wheat breads absorb the flour more slowly. Does anyone make whole wheat breads in their kitch aid , and if so, what are your tips for getting the dough to the proper stage. for rising?

Only for a couple of minutes, or the dough will get sticky. And when sticky, you'll add flour, and the bread will be very heavy. What happen is: The longer you knead the dough in the machine, the water gets in the flour. If you only knead for a couple of minutes, the flour grains will not suck water, and the dough will be light and easy to knead with your hands..
Use the machine for a couple of minutes, then stop, and put some flour over the dough, then cover with a cloth, and let it rise
the first time. Then knead the dough for hands, cut in portions, and the set for 2nd.rise..then bake...

Here's my special trick: After baked, warm some water, take two table spoons of potato flour, a little water, and add to the warm water.. You''ll get a grey mass.. When breads are baked, use a brush and put the potato mass on, in very thin layers. You'll hear a crisp sound when adding the mass on the newly baked breads. The bread will get a soft crusp...

My wife uses her Kitchen Aid to start the bread all the time.
She does not use the dough hook, she mixes all the ingredients with the K.A. then she puts the dough into a large bowl and finishes it off by kneading it, adding flower as needed. She makes 9 or 10 loaves at a time. She uses a blend of whole wheat and white flower then adds poppy seed, walnuts, pine nuts and other goodies. She varies the added ingredients from batch to batch. delicious every time.
