Because boiling is when the liquid molecules are so excited it forces any dissolved gasses (air) out. The oils either may burn (oxidize) before that occurs ,or they may not have much dissolved gas to release.

Oh, it'll boil. Just gotta get it hot enough. Oil just has a high heat capacity.
Get some cooking oil and put it in a frying pan, put the pan on the stove (with the stove on), and let it sit. It should take about 5-10 mins.
Or just make some bacon.

Boiling oil was often used as a defensive weapon back in the Middle Ages; just dump it off the walls and onto the invading horde. Because of its high heat capacity and its resistence to any sort of speedy removal, anyone hit with boiling oil was guaranteed severe, possibly fatal burns.

anything will boil if the temprature is raised enough. the term boil refers to the moment any liquid becomes a gas. oil needs very high temprature.

boiling is the rapid evaporation of water. Oil is not water so it can't boil. Oil appears to boil when food is placed in it because of the water in the food is rapidly evaporating.
