So today my boyfriend is moving out. It has taken him 5 days to finally get to the point where he is, he has had the boxes sitting out for 3 days now. Why is he being nice? I really don't want to talk I just want him out!

You don't HAVE to be nice. But it doesn't hurt anything. I think you two just need to agree that it's over, it's done, and that's that, but agree to be civil to each other. Hopefully nothing horribly bad happened between you.

Now, on the other hand, it sounds like he is hoping to fix things up with you, and from the sounds of it, you don't seem to be open to that possibility. Are you afraid that if you are too nice, you will give him the idea that you're reconsidering? If so, maybe you could just give him a nice smile while you tell him something like "don't think this means I'm taking you back" or something along those lines. The fact that he's taking forever to pack his stuff does make it sound like he's stalling and trying to prolong his time with you.

I've never actually had a girlfriend throw me out but I can imagine he's probably very sad right now. Don't be too hard on him (unless he really deserves it).

Sounds like he is being nice to make a bad situation not worse. You will be a better person to just be polite back regardless of how you feel. Vent to your friends how you are feeling rather than making a few days worse than it already has to be. People will respect you for doing that.

Being polite is a way of him trying to get back in to your good graces, hense then he can move back in. Best thing is to give him a date to be out the sooner the better, then if he is not let him know that his stuff will be given to Goodwill. Also you just want him out, sorry game over got to get on with your life.
