Body language, knowledge of that person's usual behaviour and routines, the choice of words used... lots of ways. Just as different people have different ability levels in sports, languages, mathematics, people are differently skilled at lying and at detecting lies.
Despite popular belief, most research shows little difference in gender abilities in telling verbal lies. Women tend to be better at long term adultery without getting caught, though, for a number of reasons I won't bore you with.
