This one's my favorite because it's different than everyone else and it doesn't need any refrigeration at all. You can pick it all up from the deli in the grocery store on your way to the party.
1 lb feta cheese, sliced or broken in pieces...your choice
Green olives
Kalamata olives
Hummus
Any or all of the following:
Pita chips
Pita triangles
Garlic chips
Lay out on big dish and just let people pick at it throughout the day. It always goes over well and there's never anything left over.

Pasta Side Salad Made Over
1 cup elbow macaroni, uncooked
1/2 cup MIRACLE WHIP Light Dressing
1/4 cup KRAFT LIGHT DONE RIGHT! Zesty Italian Reduced Fat Dressing
1 cup KRAFT Natural 2% Milk Reduced Fat Colby & Monterey Jack Cheese Crumbles
3/4 cup matchstick-cut carrots (julienne)
1/2 cup frozen peas
1/2 cup chopped red pepper (1/2 of a medium red pepper)
COOK macaroni as directed on package; drain. Rinse with cold water; drain again.
MIX dressings in large bowl. Add cheese, carrots, peas, peppers and macaroni; mix lightly. Cover.
REFRIGERATE at least 30 min. or up to 24 hours before serving.
I ALWAYS make a double batch...even just for 2 of us...the leftovers are wonderful! Also, I change the recipe a little...I use (in a double batch) 1/4 cup of red pepper and 3/4 - 1 cup diced seedless cucumber...it tastes so good! I hav made this dish for tons of occasions and EVERYONE has loved it and asked for the recipe!

Either Pasta Salad or Black Bean and Corn Salsa or Salad. Both very easy to make. Both can be made the night before, which is a huge plus in my book. I make these all the time and both are hits. Good Luck.
Pasta Salad
1 lb box spiral pasta
1c green pepper chopped
1c red pepper chopped
1c carrots chopped
1c sugar
1c white vinegar
3/4 veg. oil
Cook pasta to al dente and run cold water over to cool
Mix veggies in pasta large bowl
Mix sugar, vinegar and oil in small bowl.
Pour vinegar mixture over pasta
Refrig. for 8 hrs or overnite.
Black Bean and Corn (My husband loves this with tortilla chips, my mother-in-law serves it as a side dish)-very easy- no cooking
2 cans black beans drained
1-16 oz can corn drained
1/3 cup chopped sweet onion
1/2 cup chopped green pepper
1 c chopped fresh cilantro
2 T veg. oil
6 T lime juice (if using fresh usually 3 limes)
1/2 t salt
1 1/2 t ground cumin
1/2 c chopped tomato (fresh or canned)
Mix everything but tomato in bowl and let sit at least 4 hours. Add tomatoes just before serving.

Rosa Marina
1 lb. Box of Rosa Marina, orzo or other small rice-shaped pasta
2 Large cans of Chunk Pineapple
2 Cans of Mandarin Oranges
1 Large Cool Whip
2 Eggs Beaten
1-1/2 Cups of Sugar
3 tbs. Flour
1 teaspoon Lemon Juice from fresh fruit.
Drain Oranges and Pineapple reserving the juice. Boil Together; 2 beaten eggs, 1-1/2 Cups of Sugar, 2 tbs. Flour and 1 teaspoon of fresh lemon juice and the juice from the fruit. Cook Rosa Marina until tender (per instructions on box) and drain. Pour juice mixture over drained Rosa Marina mix well and let stand overnight. The next day, fold in Cool Whip and fruit. Let stand at least 2-3 hours. Best if let stand overnight.

Snickers Apple salad
4 granny smith apples, cored and diced but not peeled
4 or 5 whole sized snicker bars, cut up
1 small package instant vanilla pudding, prepared with only 1 cup milk
8 oz. cool whip
Just mix together. Always a winner, and serve it cold. It will stay all day, but do not prepare the day before b/c it's not as good the next day.

Why don't you try pasta salad? That's my favorite dish for potluck's. Our recipe is also really easy. All it is, is boiled noodles, whatever vegetables you have on hand, and some home made Italian dressing. Delicious!

Ahead of time, grill boneless skinless chicken strips on bamboo skewers. Refrigerate and bring to the potluck with dipping sauces like barbeque, teriyaki, chili sauce, or use any of those 30 min. marinades as dipping sauces. The skewers make them great finger food.

three color pasta -cooked & drained
broccoli florets
pepperoni
tomatoes
onions
green peppers
shredded carrots
mozzarella cheese - cubed small
black olives
and top it with Good Season Italian dressing- chill & serve

Well, if you really want to take something cold, how about a Mexican Salad? Just shredded lettuce, seasoned beef, tomatoes, black olives, shredded cheese, and taco sauce. For some extra flavor, add sour cream.

Just make Jello-Pie.
Mix Jello powder into cool whip, pour into ghram cracker crust. Refridgerate for a few hours and it should hold up fine over ice.
You can make different flavors so it's quick easy and tastes good too.
