CHEESE & PIMENTO SPREAD
2/3 c. sugar
3 tbsp. flour
1 egg
1/2 tsp. salt
Pimento to taste
1 c. cream cheese
Dash pepper
1/2 c. water
1/2 c. (not quite 1/2 c.) vinegar
1 tbsp. butter
Beat egg, add sugar then flour and mix well. Add salt and pepper, water and vinegar. Cook slowly until thick then add butter and cool.
Add cheese and pimento to taste.

If it's what we used to have, basically 8oz room temp. cream cheese, salt and pepper, diced pimentos from a jar, a bit of lemon juice; mix and put into a container and back into the fridge; I also like to add green olives with the pimentos already into the mix....Yummy!

Pecan Pimento Cheese Spread
INGREDIENTS:
1 (4 ounce) jar pimento peppers, chopped with juice reserved
1 cup mayonnaise
1 pound shredded sharp Cheddar cheese
1/2 cup chopped pecans
salt and freshly ground black pepper to taste
DIRECTIONS:
In a medium bowl, stir together the chopped pimentos, their juice, and the mayonnaise. Add the cheese, and stir until thoroughly coated. Stir in the pecans and season with salt and pepper. Serve immediately, or refrigerate until serving.

PIMENTO CHEESE SPREAD
1 tablespoon Sugar
3 tablespoons Vinegar

1 Egg -- beaten

2 Eggs; hard-boiled -- chopped
8 ounces Cream cheese -- OR 1/2-lb
American cheese -- cubed
1 tablespoon Onion -- grated
1 small Jar pimentos -- finely chopped
Mix first seven ingredients in a double boiler and cook until mixture thickens. While mixture is still hot add hard-boiled eggs, cream cheese or American cheese, onion and pimentos. Blend well and put in jars or other containers. Cover and store in refrigerator.

PIMENTO CHEESE SPREAD II
Grind together: 1/2 lb. cream cheese or 1/2 lb. Longhorn cheese 2 hard boiled eggs
Set aside.
DRESSING:
In saucepan add: 1 tsp. salt 1 tsp. pepper 2 tbsp. flour 2 tbsp. sugar 1/2 c. milk 1/2 c. vinegar
Cook together until thick. Add cheese, eggs, pimento. Blend well. Cool and store. Makes a delicious spread for sandwiches, especially in hot weather. Keeps well.

1/2 lb. sharp cheddar
1/2 lb. mild cheddar
2 oz. pimento
2 Tbsp pickle relish
6 Tbsp. mayonnaise
1 tsp. Worcestershire sauce
1/8 tsp. garlic salt
2 Tbsp. onion, grated
Tabasco sauce to taste
Salt and pepper to taste[/code]
Grate the cheeses in a food processor. Mash pimento with a
fork. Combine all ingredients with a fork until well mixed,
and return to the food processor until the ingredients are
well blended. Spread on bread immediately if making
sandwiches. It can be stored in the refrigerator and
softened in the microwave before spreading. Makes 3 loaves
worth of sandwiches.

1 dash Worcestershire sauce

1 tablespoon mayonnaise

In a medium bowl, mash the pimentos using a fork. Mix in cheese, onion, Worcestershire sauce, and mayonnaise. Season to taste with garlic powder and black pepper. Spoon mixture into a container large enough to hold the pimento spread, and store in the refrigerator.
