All-natural peanut butter must be refrigerated, most commerical peanut butters have enough preservatives to be okay left out. Jelly should be kept in the refrigerator, it has a much higher sugar content and because it is mostly water, it would be a quick breeding ground for bacteria and mold.

jelly will spoil if left out, but peanut butter will turn hard and not spread as easy if you put it in the refrigerator.
