1. Be sure your grill is clean.
2. Lightly oil the grate of your grill by brushing it with olive oil. This will help reduce your cleanup by helping to prevent sticking of the salmon to the grill.
3. Buy the freshest salmon you can find.
4. Do NOT overpower your salmon with seasoning. Lightly season your salmon by brushing it with extra virgin olive oil, then sprinkle lightly with garlic powder, dill or herbes de provence, salt, and pepper.
5. Squeeze the juice from some lime wedges upon your fish. Once you've tried lime, you'll never want lemon with your fish again
6. Get your grill hot. A grill on low heat is a waste of time and defeats the purpose of grilling at all.
7. Place your fish meat side down on the grill first as you don't want to burn the skin side by overcooking. The time to flip can vary greatly depending on your grill and the level of doneness you desire. I'm guessing three minutes is good if your grill is hot.
8. Once the fish is on the grill, DO NOT MOVE. Stay with your fish and watch it carefully. You will flip the fish when the flesh on the cooking side starts to turn from red to pink, approximately three minutes. Once on the skin side, the fish may cook for another two to three minutes depending on how crunchy you want the skin and on how pink(rather than raw red) that you want your fish to be.
9. Serve with a light white wine or a pale ale...and with some zucchinis and squash that hopefully you grilled since you had the grill hot already anyway.

grilled salmon w/ sweet mustard vinaigrette
For the vinaigrette:
3 tablespoons white wine vinegar
2 tablespoons coarse- or whole-grain Dijon mustard
1 small shallot, finely chopped
2 tablespoons honey
1/2 cup olive oil
Salt and freshly ground black pepper
For the salmon:
4 (6- to 8-ounce) salmon fillets, 1 to 1 1/2 inches thick, with the skin
Olive oil
Salt and freshly ground black pepper
Vinaigrette:
Whisk the vinegar, mustard, and shallot together in a medium bowl. Gradually whisk in the honey, then the oil, until the dressing is emulsified. Season to taste with salt and pepper. (The vinaigrette can be made a few hours in advance, covered, and kept refrigerated. Bring to room temperature and whisk or shake well before serving.)
Salmon:
1. Heat your grill to high.
2. Brush the fish on both sides with oil and season with salt and pepper. Grill the salmon skin side down until the skin is lightly charred and crisp, 4 to 5 minutes. Turn the fillets over, reduce the heat to medium or move to a cooler part of the grill, and cook until just cooked through but not falling apart, 2 to 3 minutes more.
3. Remove the fish to serving plates or a platter and spoon a few tablespoons of vinaigrette over each fillet. Serve immediately.
Serves 4; can be doubled for 6 to 8

The best salmon recipe I have is pretty simple actually! You marinate it in 1/3 cup pancake syrup(since I always use light pancake syrup I had 2 tsp of sugar to it) and 1/3 cup soy sauce for 30-60 min. Then grill it! It sounds disgusting but man it tastes good!

baked salmon recipe
1 whole Alaska Salmon, about 6 lbs, cleaned
freshly ground Pepper
1 medium Onion, thinly sliced
1 Lemon, thinly sliced
4 to 5 sprigs Parsley
1 tsp dried Thyme, or 5 sprigs fresh thyme
1 Tbsp Olive Oil
Directions:
Preheat oven to 400 degrees. Rinse the salmon inside out and pat it dry. Sprinkle the inside with salt and pepper, and stuff it with half of the onion, half of the lemon, and all of the parsley. Place the salmon on the foil large enough to wrap it and sprinkle with salt, pepper, and thyme. Rub with olive oil. Scatter the remaining onion and lemon slices on top and seal foil tightly. Place on a cookie sheet and bake 40 to 45 minutes. Cool in the foil on a rack. Remove onion and lemon, and skin if desired. Serve baked salmon at room temperature.

Marinate fillet in Italian dressing and then bake salmon in the oven for just 10 minutes. Then pour some more Italian dressing on it and broil just until it starts to glaze over and brown up. This is sooooo good! Watch it close, it will broil very quickly! Can also sprinkle with brown sugar and cinnamon and then roll in crushed nuts and bake!! I could go on forever!
