Need some idea's for cookies that don't have any egg in the ingrediants.

EGGLESS CHEWY OATMEAL RAISIN COOKIES

This recipe calls for no eggs. If you have an egg allergy, want fat free cookies, or don't like eggs this recipe is right for you. No more buying expensive egg substitutes. The subsitute is made with 3 simple common ingredients: baking powder, vinegar, and water. These cookies are quite good. The day I made them, they were gone within 2 hours.

2 sticks butter, soft
2 cups light brown sugar, packed
3 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla
2 cups quick cooking oats
1 cup raisins, rolled in flour
2 1/2 cups flour
1 cup sugar
2 tbsp. water
2 tbsp. vinegar
1 cup chopped pecans (optional)

Preheat oven to 350°F.
Combine sugars and butter. Add vanilla, water, and vinegar; mix well.

In a separate bowl, combine flour, baking powder and soda, followed by salt. Combine the two mixtures together. Add raisins, which have been lightly rolled in flour, and oats; mix together well. Add pecans if desired.

Roll dough in small balls with about 6-9 cookies per ingreased cookie sheet.

Bake for 10-12 minutes. Cookies won't look ready at 10 minutes but take out and let sit for 5 minutes in order to be chewy.


EGGLESS PEANUT BUTTER COOKIES

1 c. tub butter
1 c. sugar
1 c. brown sugar, firmly packed
5 tbsp. skim milk
1 tsp. vanilla
1 c. peanut butter
2 c. flour
2 tsp. baking soda

Thoroughly cream butter, sugars, milk and vanilla. Stir in peanut butter and add dry ingredients. Drop from a teaspoon onto an ungreased cookie sheet. Press down with a fork. Bake at 350 degrees for 15 minutes


EGGLESS SUGAR COOKIES

1 1/2 c. powdered sugar
1 c. (tub) butter
1/4 c. skim milk
1 tsp. vanilla
1/2 tsp. almond extract
2 1/2 c. flour
1 tsp. cream of tartar
1 tsp. baking soda

Mix ingredients together. Refrigerate for 2-3 hours. Roll out, use cookie cutters. Bake 350 degrees for 8 minutes.

I think that one of the functions of eggs in cookies is to bind the ingredients together, so it isn't so crumbly.

so you might have better luck with cookies that are supposed to be crumbly, or bar cookies.


Also, depending on why you don't want the eggs, there are Egg Beaters (at the grocery store, refrigerated section; no cholesterol, low fat.) Don't know if that would help if the problem was allergies.

Here's one of my favorites:

Combine 1 stick of butter, 2 cups of sugar, 1/2 cup of milk, and 3 tbsp. cocoa in a saucepan and boil for 1 minute.

Add 1 tsp. vanilla, 1/2 cup peanut butter, and 3 cups of Quaker Oats. Stir thoroughly.

Drop by the spoonful onto wax paper and cool.

They're called "Oatmeal Candy Cookies" and they're awesome!

--- No Bake Chocolate Oatmeal Cookies ---


*1 stick of butter or margarine
*1/2 cup of milk
*2 cups of sugar
*1/3 cup of cocoa powder
*1/2 cup of peanut butter
*3 1/2 cups of oatmeal
*1 tsp vanilla extract

-Combine butter (or margarine) with milk, sugar, & cocoa powder
-Blend in a large bowl & melt in the microwave (make sure the
mixture boils for at least 1 minute).
-Remove mixture and add peanut butter & vanilla, blending well
while still warm.
-Pour over top of oatmeal (in another bowl), and thoroughly
blend ingredients with a wooden spoon or hands.
-Spoon onto wax paper
-Put in freezer for 1 hour.

EGGLESS SUGAR COOKIES

2 c. shortening or butter
2 1/2 c. sugar
1 c. sour milk
2 tsp. soda
2 Tbsp. hot water
1/4 tsp. salt
3 tsp. vanilla or other flavor
8 c. flour

Cream shortening and sugar until fluffy. Slowly add
sour milk (sour it by adding 1 tablespoon vinegar to sweet milk). Dissolve soda in water and add with salt to milk mix.

Add flour, a few cups at a time until a stiff cookie dough forms. Divide dough into thirds. Roll each into a ball. Roll out on floured board to 1/4-inch thick. Cut with a 4 to 6-inch cutter or a can. Bake on lightly greased cookie sheets at 350 degrees for 8 to 10 minutes. Frost or decorate your favorite way.EGGLESS SUGAR COOKIES

1 tsp. soda
3/4 c. butter
4 c. flour
2 tsp. baking powder
1 to 2 tsp. vanilla

Mix all ingredients and roll into a long roll. Freeze
cookie roll and slice. Bake in 375 degrees oven for 10 to 12 minutes.
EGGLESS SUGAR COOKIES

1 c. sugar
1/2 c. shortening or butter
2/3 c. sour milk
1 tsp. vanilla
1 tsp. salt
1 tsp. baking powder
1 tsp. soda
3 c. flour

Cream sugar and shortening. Add sour milk and vanilla.
Add dry ingredients. Roll out on floured surface. Cut and bake on baking sheet at 400 degrees for 12 to 15 minutes. (Soft cookie.)

The egg is use in cookie recipes only as a binder. Its easy to substitute the egg. just use extra soft tofu. Drain the tofu a bit and mix it into the mixture instead of eggs. comes out great!!!
