What you saw with the three girl "readers" was simply a Catholic Mass. Not always, but sometimes, weddings are also integrated into a Mass. Catholic Mass is nothing more than a worship service. In fact, the worship in heaven described in the Book of Revelation is closely mirrored in the Mass.
The First reading comes from the Old Testament. The second reading is from the New and the third comes out of one of the Gospels. And usually all three are related and significant to one another. The fact is...there is more scripture reading done in the Catholic Mass than you will find in any Protestant Church.

An intersted side note: In the Catholic Faith the priest is not the minister of the sacrament of marriage. The man is the minister to the woman and the woman is the minister to the man. The priest is there as the official witness of the Church.

Every Mass, whether they are weddings or not, have three or four Bible readings.
The first reading is usually from the Old Testament and is read by a lay person.
The responsorial psalm is lead by a lay person and responded to by the entire congregation. This may be sung or read.
The second reading is usually from a New Testament Epistle and is read by a lay person. This reading may be skipped during weekday Masses.
The final reading is from a Gospel and is read by the priest or deacon.

They don't have any significance....it's what this particular bride and groom wanted. Even being Catholic she could have chosen to get married with just the Priest "marrying" them with none of the other "stuff". Think brides who have 2 flower girls....no significance just a personal preference.
