For hard boiled, take the egg out of the pan after 6 or 7 minutes of boiling, if the water evaporates off the shell in 1-2 seconds it's hard boiled.
For soft boiled, do 3 minutes from the first big bubble when it starts boiling.

If you do as jro660 suggests you'll get exploding eggs if you're not careful! For a soft egg (white set and yolk still runny) 3-4 minutes, depending on the starting temperature (i.e. if you're one of these strange people who keep eggs in the fridge then it's naturally going to take longer to cook. For a hard boiled egg (I presume for salads/sandwiches/stuffing) no more than eight minutes, fridge or not. Beyond that you'll get a dark ring form between the yolk and the albumen (white), and although it doesn't really alter the taste it doesn't look very nice.

Hard is between 10 and 15 minutes. 10 in constant boiling water and 15 if it's simmering.
A soft boil is between 4 and 8 minutes depending on how runny you like it.
