YANKEE POT ROAST, COLE SLAW AND JELLO:

Pot roast using the slow cooker
2 lb chuck roast
1 pkg lipton onion soup mix, dry
1 can cream mushroom soup, campbells
1 celery stalk, diced
1 onion, diced
2 whole carrots, peeled and cut
4 potatoes, peeled and cut in 1/4
1 crushed garlic clove
3 tbsp flour
1 Reynold's slow cooker liner, optional

The slow cooker liner makes cleaning up a snap!
In the crock pot, add the can of cream mushroom soup, a can of water, the lipton dry soup, flour and mix the ingredients well.

Add the roast and the garlic. Mix around til covered with soup mix. Add the onions and veggies. Add water to barely cover the veggies (remember the water level may go up during cooking!).

Cover and turn crock pot to med/low. Cook 6-8 hours and it will be so tender! Serves 3-4


MEXICAN COLE SLAW
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/2 cabbage, sliced and diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste

In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well. Chill for 1 hour and serve cold

JELLO DESSERT
1 pkg large jello, any flavor
coolwhip
fresh fruit

Make the jello as on the package but use 1/2 cup less water.
Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 4-6 hours. Mix up the jello and add 1/4 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.

Put the mix in a glass, and top with more fresh fruit or coolwhip.
Serves 4

I don't know if the ingredients are more expensive in the UK, but this is what I make if I need to make something quick, cheap and tasty:

Pasta with spinach/boursin sauce
serves 2
150 grams of spaghetti
100 grams of smoked bacon bits
200 grams of frozen spinach
75 grams of Boursin soft cheese

Bake the bacon bits until brown. Add the spinach and let it defrost in the pan. When the bacon/spinach mix is hot, add the Boursin cheese and mix until creamy.
Cook the spagetti following the instructions on the pack. Mix with the sauce and serve.

Ma Po bean curd
Frittata

Herb Frittata
1 cup minced herbs (see below)
2 tablespoons butter or olive oil
5 or 6 eggs
1/2 cup freshly grated Parmesan or other cheese
Salt and freshly ground black pepper to taste
Minced fresh parsley leaves for garnish

Instructions
Mince about 1 cup of fresh herbs- chervil, parsley, dill, or basil should make up the bulk of them, but others such as tarragon, oregano, marjoram, or chives may be added in smaller quantities-and stir them into the egg mixture just before turning it into the skillet. Proceed as below, garnishing with whatever herb you like.

Preheat the oven to 350 degrees F.

Place the butter or oil in a medium-to-large ovenproof skillet, preferably non-stick, and turn the heat to medium. While it's heating, beat together the eggs, cheese, salt, and pepper. When the butter melts or the oil is hot, pour the eggs into the skillet and turn the heat to medium-low. Cook, undisturbed, for about 10 minutes, or until the bottom of the frittata is firm.

Transfer the skillet to the oven. Bake, checking every 5 minutes or so, just until the top of the frittata is no longer runny, 10 to 20 minutes more.(To speed things up, turn on the broiler, but be careful not to overcook.) Garnish and serve hot or at room temperature.
Yield: 4 servings

Ma Po Bean Curd
* 5-6 dried Chinese mushrooms
* 1 1/4 cups hot water
* 1/4 cup oil
* 2 tsp salted black beans, soaked for 10 minutes and drained.
* 5-6 tbsp ground beef
* 3 scallions, thinly sliced
* 4 garlic cloves, minced
* 2 tbsp soy sauce
* 2 tbsp hoisin sauce
* 2 tsp chili sauce
* 1 tsp sugar
* 2-3 cakes Bean Curd
* 1/4 cup clear broth
* 2 tsp. cornstarch, dissolved in 3 tbsp water
* 1 tbsp sesame oil
Soak the mushrooms in the water for 20 minutes. Drain, reserving the water. Stem the mushrooms and cut into quarters.
Heat the oil in a pan. Add the black beans. Stir-fry for 20 seconds. Add the beef, half the spring onions (scallions), and the mushrooms. Stir-fry for 3 to 4 minutes. Add the garlic, 3-4 tablespoons of the mushroom water, the soy sauce, hoisin sauce, chili sauce, sugar, bean curd, and broth. Bring to the boil and simmer for 3-4 minutes.

Sprinkle in the cornstarch mixture, the remaining spring onions (scallions), and the sesame seed oil. Cook, stirring, until thickened. Serve hot.

INGREDIENTS:

* 1 tablespoon olive oil
* 1 (15 ounce) can kidney beans
* 1 1/2 cups tomato sauce
* 4 1/2 cups water, divided
* 1/2 teaspoon dried oregano
* 1/2 teaspoon dried basil
* 1 pinch dried thyme
* salt and pepper to taste
* 5 teaspoons adobo seasoning, divided
* 2 cups uncooked white rice

DIRECTIONS:

1. In a large saucepan combine olive oil, kidney beans, tomato sauce, 1/2 cup water, oregano, basil, thyme, salt, pepper and 2 teaspoons adobo. Simmer on low heat.
2. Meanwhile, bring 4 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes, or until rice is cooked and all liquid is absorbed. Stir in remaining 3 teaspoons adobo. Serve beans over the rice.

take some chicken any would do I prefer chicken tenders mariniate it preferbally over night in ranch dressing place the chicken in bread crumbs and fry.
we're always on a budget so am constantly inventing new ways to cook cheaply lol.

1 box Silky Tofu
1 tps olive oil
2 drops of sesames oil
2 Tbs of finely chop scallion
2 Tbs light Soy Sauce
Steam Tofu for 3 mins. heat up oil,
When tofu is done, put scallion on top of it. pour heated up olive oil on it then soy sauce. few drop of sesames oil. Wah la, Its easy, quick and health.
