Excellent question. I think personal preference prevails, but the way i see it is that you don't have all the individual roast items on your plate to be eaten a solitary endevour. It is critical to taste all the "roasty goodness" in one mouthfull so it is important to get as much variety on your fork as possible. I think there are three main combinations though.
1- "The Classic" - Beef, Yorkshire Pudding, roast potato and dipped in gravy.
2- "The Veggie" - Roast carrots, parsnpis, (maybe sprouts) and potatos, again, dipped in gravy.
3 - "The mopper" - just potato, but used as a mop at the end of the meal to clear all reminants off the plate.

I find that the only lasting memory is the last mouthful - this is the most crucial part of the meal. Clear all the veg out the way by eating them first, then ensure you have enough gravy, meat and roastie/yorkshire left for that last satisfying mouthful.
And if you've any gravy left, soak it into a slice of white bread. Fantastic.

I tend to put a bit of everything on one fork or sometimes two things . i.e. a bit of roast with a different veggy each time.

I eat vegetables first, then potatos, and then the meat. When you mix your food it takes like just that everything mixed together.
