Some processed food, like instant ones, have to be cooked before being packaged, resulting in large amounts of the vitamins being lost through the process.

Any time a cooking process is involved, vitamins are decreased. There is no way to remove all the vitams in fruit or vegetables though, they would still be present in canning.

I am pretty sure when you peel fruit and then put it in water in a can some of the vitamins get leeched out.
