Ingredients:
2 eggs, 1/2 cup oil(125ml), 1 cup milk (240ml), 1tsp. vanilla, 1 3/4 cups all-purpose flour(240g), 1/2 cup sugar(85g), 1/4 cup cocoa(35g), 1Tbsp. baking powder, 1/2 tsp. salt, 1/2 cup semi-sweet chocolate chips(85g).
Method:
Preheat oven to 400 F (200 C) and prepare muffin pan. Grease muffin pan or fill with paper liners. A nonstick pan requires no greasing. In large bowl add and combine well eggs, oil, milk and vanilla. In smaller bowl combine well flour, sugar, cocoa, baking powder, salt and chocolate chips. Combine wet and dry mixtures and fold together gently until just mixed. Spoon into prepared pan. Bake at 400 F (200 C) for 20 minutes. Remove from pan and cool on rack.
Hint: Sprinkle extra chocolate chips on top of each muffin before baking.

Double Chocolate Muffins
Split in half and spread with raspberry jam for a desserty experience.
2 cups flour
2/3 cup baking cocoa
1/2 cup sugar
2 teaspoons baking soda, pressed through a sieve to remove lumps
1/2 teaspoon salt
1 cup semisweet chocolate chips (miniatures work great!), divided
1 1/3 cups milk
1/3 cup vegetable oil
2 large eggs
1 teaspoon vanilla
Preheat oven to 400°F. Coat muffin tins with non-stick cooking spray. In a large bowl, combine the dry ingredients. Stir in 1/2 cup chocolate chips. In a separate bowl, combine the liquid ingredients and whisk until smooth. Fold into the dry ingredients just until moistened. Don't overmix. Scoop the batter evenly into the prepared pan. Sprinkle with the remaining chocolate chips. Bake at 400°F. for 20-22 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack before removing from the pan.

Most of the recipe given here is good but if you want it better,replace the chocolate chip with some good brand chocolate bar like Cadbury or Nestle.Just break them up and add to the muffin batter before baking.You can even use those chocolate with nuts especialy Hazelnut or Raisins.

Chocolate Chip Muffins
2 cups all-purpose flour
1/3 cup light-brown sugar, packed
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
1/2 cup butter, melted and cooled
2 eggs, lightly beaten
1 teaspoon vanilla
1 (11 1/2 ounce) package milk chocolate chips
1/2 cup walnuts or pecans, chopped
12-18 muffins
1. Preheat oven to 400 F.
2. Grease twelve muffin cups.
3. In a large bowl, stir together flour, sugars, baking powder, and salt.
4. In another bowl, stir together milk, eggs, butter, and vanilla until blended.
5. Make a well in center of dry ingredients.
6. Add milk mixture and stir just to combine.
7. Stir in chocolate chips and nuts.
8. Spoon batter into prepared muffin cups.
9. Now bake for 15-20 minutes or until a cake tester inserted in center of one muffin comes out clean.
10. Remove muffin tin to wire rack.
11. Cool for 5 minutes.
12. Remove from tins to finish cooling.
13. Serve warm or completely cool.
14. These muffins freeze well.

Kahlúa® Brownies
½ cup butter
3 ounces unsweetened baking chocolate
1 ½ cup sugar
3 eggs
1 ½ cup all purpose flour
½ teaspoon baking powder
½ teaspoon salt
1/3 cup Kahlúa®
Heat oven to 350Æ F (180Æ C)
Grease an 8 X 8 inch cake pan.
Mix together the flour, baking powder, and salt, and set aside.
In a saucepan over low heat, melt the butter and chocolate, stirring frequently until smooth.
Remove the saucepan from heat, and let cool.
Beat eggs and sugar until light. Mix in cooled chocolate mixture and Kahlúa® flour mixture. Spread in the cake pan and bake for 40 minutes or until a toothpick inserted in the middle comes out clean.
Cool slightly, then brush the top with about 1-2 tablespoons of Kahlúa®.
Cut into squares.
Kahlúa® Chocolate Cake
3 eggs, separated
¾ cup granulated sugar
¼ cup butter
1 cup light brown sugar, packed
2 ¼ cups all-purpose flour
½ cup unsweetened cocoa powder
1 ½ teaspoon, baking soda
¾ cup strong cold coffee
¾ cup Kahlúa®
Kahlúa® Frosting
Grease & flour two 9 inch cake pans.
Preheat oven to 350† F.
Beat egg whites until frothy; then beat in sugar until stiff peaks form. Set aside. Cream butter and brown sugar until fluffy. Beat in egg yolks, one at a time. Sift flour, cocoa, baking soda together. Add to creamed mixture alternately with coffee and Kahlúa®: blend well. Fold egg whites into batter. Pour into prepared pans.
Bake 30-35 minutes, or until done. Cool 10 minutes. Invert on wire rack; remove pans. Cool before frosting. Serves 10-12
Kahlúa® Frosting:
In large bowl, cream 6 tablespoons. butter and 1 pound sifted powdered sugar. Add 3 tablespoons unsweetened cocoa powder, 3 tablespoons Kahlúa® and 2-3 tablespoons hot coffee; beat until smooth.

yeah, how about you go to the store and get a box of muffin mix and choc. chips. and mix them together. Or a box of choc. muffin mix
