2) Heat the water in a big pot, put all the ingredients into the pot when the water is boiled, cover the pot and let it boil for half an hour then lower the heat (medium or small) and boil for 1 hour or until the congee is thick. Boiling time is subject to how thick the patient prefer his/ her congee to be

100 g minced pork (marinated with salt / garlic powder / corn starch for about half an hour or so)
120 g oatmeal
250 cc non-fat hi-calcium milk
600 cc to 800 cc water (depends on how thick you like it)
chive or green onion and coriander - finely chopped
1 egg
1/2 teaspoon of seasalt
white pepper

1) Boil the oatmeal with water in a cooking pot for about 15 minutes with medium to low heat, stir occasionally

2) Beat the egg

3) Pour the milk to the oatmeal, bring to boil again and stir till it is nice and thick

4) Stir in the minced pork and cook for about 2 to 3 minutes

4) Pour the egg into the pot, stir quick, add sea salt and white pepper. Turn off the heat (do not over cooked the egg)

5) Sprinkle the chive / green onion into the pot

6) Serve with Chinese or Japanese pickles

If you do not like pork, you may change it to minced chicken or beef.

5 fl oz milk
1 pint boiling water
1 level teaspoon of salt
