Stuffed Aubergines (eggplant)
Cut a good sized aubergine in half, cover & microwave for about 4 min.The flesh should be soft...
Scoop out the flesh and leave the skin as a boat shaped recipient.
Sauté and crumble two hamburgers (or 200 grams minced beef)...add a small glass or tin of tomato sauce, sprinkle with thyme and oregano and powdered onion and garlic.
Cook for about 5 minutes...
add the aubergine flesh, stir to mix.
Refill the aubergine skins.
Put a slice of cheese on top and put back in the microwave for 1 minute on medium power (too strong will make your cheese rubbery...medium power will just melt it).
Serve with some instant white rice.

Spaghetti - if fresh egg spag then its quicker. Chop some tasty type sausages, lightly fry them. Get some pesto. Mix 'em all 2gether.
OR use tomato sauce or even just olive oil and herbs.
Chuck some cheese on top and if u have time, grill for a few minutes. Absolutely yummy.
