How about having some seasoned chicken fingers? Here's a recipe for some easy-to-make strips that your kids will gobble up. Crunchy Chicken Dippers 2 eggs 2 lb. boneless skinless chicken breasts, cut into 1-inch wide strips 41/2 cups honey bunches of oats cereal, finely crushed 1 cup Kraft original BBQ sauce Preheat oven to 375F. Beat eggs lightly in shallow dish. Dip chicken in eggs, turning over to evenly coat both sides of each strip. Coat chicken evenly with cereal. Place in two 15x10x3/4-inch baking pans sprayed with cooking spray. Bake for 25 minutes, or until chicken is cooked through. Serve as dippers with the barbecue sauce.

I tried this out and my kids just loved it. I had left over spaghetti and my kids didn't want to eat it. So I took a pie crust baked it a little and stuck and spaghetti in it with cheese on top. Baked it for another 25 mins then took some bread that had butter and garlic and put it on top of the cheese and baked it for a couple more mins. They loved it and it's our new thing that they love My kids are 11 and 8 years old

These are some choices I make for my finicky kids:
1. mac & cheese with hot dogs
2. leftover chicken cut into bite size pieces placed on a pre-washed salad. my kids just love to eat their green veggies.
3. hamburger helper (cheeseburger is a big hit in our household. you might want to subsitute the ground beef with ground turkey and at the very last 5 minutes of cooking, try stirring in some frozen corn washed of course to get rid of the clump and it will be a YUMMY hit. What kid says NO to corn).
4. pancakes
5. hot dog with can beans.
I hope these selections help you in some way.
My kids are 4 & 8.

Pita Pizzas -- Buy the whole wheat stuff (Trader Joe's are 99 cents for 6 big ones) and put some olive oil, tomato sauce and cheese -- even feta if you like that. Make sure you get your quota of garlic powder and onion powder to ward off viruses and you've got the perfect meal! Throw on sometimes leftovers like meat sauce, sliced hot dogs, bell peppers, etc.

Too many kids eat things with high starch and fat, but thats what they like. So here are alternatives to those cravings. I like to try to make things that they can help me fix and are good for them. Two favorites of mine and theirs.
Kiddie Quesadillas:
small flour tortillas
fat free refried beans
can of vegetarian chili
low fat shredded cheese
low fat sour cream, optional.
- Lay out the tortilla and let them top it themself. You heat in the oven or toaster oven, 350 degrees.
Cheesy 'sketti:
cooked spagetti noodles (leftover noodles are great for this)
1 can Campbell's cheddar cheese soup
1 can diced chiken breast in water.
Drain chicken, pour it and cheese soup over the noodles, with a little water in the bottom of the bowl to rehydrate the noodles. Microwave to heat and stir.

MAGDALINAS VALENTINE CHICKEN
4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount
flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.
Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.
Drain and remove excess grease from skillet.
Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.
Simmer on medium heat till onions are soft.

NICK'S SPAGHETTI SAUCE
olive oil
1/2 pkg jimmy dean spicy hot sausage
1/2 pound ground beef
1/2 chopped yellow onion
1 small can mushroom stems and pieces, diced
1 large can hunts brand spaghetti sauce with mushrooms
1 large can hunts brand spaghetti sauce with meat
2 cloves garlic, peeled and cut on ends
Italian seasoning
2 bay leaves
1 dash salt (to taste)
1 dash sugar (to taste)
Heat some olive oil in bottom of a large kettle then, add sausage and beef together and brown meat.
Then add the chopped onions and the mushrooms and saute to cook down and remove excess moisture.
When the onions get transparent and have cooked down add cans of sauce and seasonings. Then reduce heat to a low simmer and cook till small boil point. Careful to stir continually so as not to burn the sauce on the bottom of pan.
Serve over your favorite pasta or use for manicotti or lasagna.
