Momen Tofu (hard one)
Lettuce (3 different kinds)
tomato (sliced)
cucumber (sliced)
toasted almond (chopped)
1) Put tofu on top of the green + tomato in to a salad bowl
2) Pour the dressing on the salad, sprinkle the almond on top
(dressing : olive oil + sushi vinegar + lemon juice + soya sauce + sugar + sesame oil)

bbq's spring to mind as summer is usually the only time the UK is hot enough to have them! You can't beat some tasty lamb chops on the grill. Light things are also good, I like omlette and salad or a jacket potato with a cold filling such as tuna mayo.

Barbeque because the food is oh so good and even if it is not, it is the company and drinks and the sun setting late and the music and laughs and stickiness and swiping at bugs and the smells. It is what fantastic memories are made of.
