It depends on which form of Judaism you are talking about. The common form as most people know it today is what has been preserved since the times of the Pharisees. After the Temple and the nation of Israel was destroyed by the Romans, the Pharisees lost thier jobs. So they became religious leaders and were called "Rav". Today we know them as Rabbis.
The uncommon form, meaning obedience to God's Torah only, dates back to the time of Moses and the giving of God's Word to the nation of Israel. The major difference between the original form of Judaism and the modern form is that the original form was the following of Torah only. The modern includes many other books that aren't from God, things like Mishnah, Talmud and Kabbalah.

The year 5766, which changes around September on the Jewish calander, is how old the world is. Judaism in the sense of following the Torah (bible), would then be in Hebrew year 2448, 3318 years ago. That was when they left Egypt and received the Torah/Bible from G-d at Mount Sinai. In the Hebrew year 1948, Abraham was born.

Really old. I would say that it is probably about 3000 years old. Sure it has mutated from an earlier religion just like all religions mutate and break off into different sects.
