John 20:28 And Thomas answered and said unto him, My Lord and my God.

how much you want to bet the was added in latter?

if in the entire Gospels that is the only verse you can find its pretty weak evidence.

especially considering the multiple times Jesus denied his divinity.

Yep, and please note that Jesus did not admonish him by saying, "Oh Thomas, you nut! I'm just a prophet."
