For a really tasty dessert treat you can take cheesecake (you can buy it superstores in a container premade) and blend it together with some sugar and eggs (to thicken it, about two eggs) then roll them into little balls.
You can put hard shell chocolate over them, and freeze them. Its like home-made philly bars.
OR!
A very berry cream soda!
You can buy frozen mixed berries (strawberries, blueberries, raspberries, blackberries etc etc.. ) and put them at the bottom of a cup and take some room temperature cream soda, pour it over the berries and the berries act a natural ice cube. It flavors the soda, and when your done, you have cool berries to munch on!

don't know bout the making of ice cream but u can always go to the fruit section of your local market and purchase the packages of fruit powders that you blend with ice to make smoothies or better yet kids can never get enough of the old home made popcicles. go buy some pop cicle sticks in the cake decorating section of your local market and get some kool aid and buy 4 different small bottles of different juices and let her pour them into the ice tray, cover with saran wrap/aluminum foil and stick the popcicle sticks through the wrap/aluminum foil for a tasty,healty, icy treat. don't use toothpicks as they are more hazardous. this is very inexpensive and all you have to do is supervise her cause she will be doing all the work and this will be more fun than a day at the amusement park

If she likes eating fruits you can always freeze some bananas or grapes, that way she can have a cool but healthy treat. Or you could make a smoothie type beverage, but pour it to popsicle molds or even ice cube trays. It will freeze, but remain creamy and also healthy. Home made ice cream sandwiches are less healthy but always fun. You can use her favorite type of cookies, and just soften some vanilla ice cream and layer. Then, she can roll the outside edge with sprinkles, or chocolate pieces, whatever she likes best. Then just freeze them again for the ice cream to reharden a bit. Have fun!

Frozen Hot Chocolate
4 squares BAKER'S Semi-Sweet Baking Chocolate, melted
1-1/2 cups milk, divided
2 Tbsp. sugar
2 cups ice cubes
1 cup COOL WHIP or COOL WHIP French Vanilla Whipped Topping, unthawed
1 tsp. vanilla
-PLACE chocolate, 1/2 cup of the milk and the sugar in blender container; cover. Blend on high speed until well blended.
-ADD remaining 1 cup milk, the ice, frozen whipped topping and vanilla; cover. Blend on high speed until smooth.
-SERVE immediately.
Another easy thing is to put a scoop of ice cream between two graham cracker halves, wrap in plastic wrap and stick in the freezer. Wait a few hours, the flavors meld wonderfully and the graham crackers aren't as crunchy. I can never keep these around so be careful. They're addictive!!

You should be able to find a good ice cream recipe on foodnetwork.com. I think either Paula Deen or Tyler Florence makes ice cream from scratch, without the electric ice cream maker. Also you can get a favorite juice, pour it into ice trays, and make popcicles out of it. Walmart has an ice shaver, where you can make your own snow cones and such. Have fun!

Frozen Strawberry Dessert Sandwiches
Ingredients
1 cup frozen unsweetened strawberries, thawed and drained
2 teaspoons sugar or equivalent sugar substitute
1 cup light non-dairy frozen whipped topping, thawed
18 chocolate graham cracker squares
Instructions
In a blender or processor, blend or process strawberries and sugar. Put puree into a bowl; fold in whipped topping. Freeze for a few minutes. To make sandwiches, put about 2 to 3 tablespoons of strawberry mixture on a graham cracker; top with a second graham cracker. Put 2 to 3 tablespoons on the second graham cracker and top with a third graham cracker. Wrap sandwich in plastic wrap and freeze. Repeat process until all graham crackers are used. Make 6 servings

If you like fudge pops, you can buy those snack packs of chocolate pudding and put a popsicle stick right in it. Don't remove the wrapping on top of it just stick it in because it will hold it up. Freeze it. Then you can decorate it using cool whip,cake icing and whatever you can think off. Since the largest part of the preparation is before, you won't have to wait in the middle between preparation and eating. I did it with my campers and they seem to really enjoy it.

Have you made kool aid popcycles yet? Follow the directions on the packet of kool aid, pour the drink into ice cube trays. Cover the trays with a plastic saran wrap, and insert little popcycle sticks. Freeze.

It doesn't take very long, but grapes are wonderful when you freeze them. When I was little I loved making popsicles out of juice in those molds they sell at the grocery store. OH! I just had another idea. You could get bananas and hard shell chocolate sauce. Dip the bananas in the chocolate hard shell, then put it on a piece of wax paper with a stick in it. Freeze!

Kraft's Easy Strawberry Daiquiri Dessert
2 cups boiling water
1 pkg. (8-serving size) JELL-O Brand Strawberry Daiquiri Flavor Gelatin
1 tub (8 oz.) COOL WHIP Strawberry Whipped Topping, unthawed, divided
1 cup cold water
2 cups sliced strawberries
STIR boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add 2/3 of the frozen whipped topping (about 2 cups); stir with wire whisk until whipped topping is completely melted and mixture is well blended. Stir in cold water. Refrigerate remaining whipped topping for later use.
SPOON strawberries into 1-1/2-qt. serving bowl; top with the gelatin mixture. Cover. Refrigerate 3 hours or until set.
TOP with the remaining whipped topping just before serving.
