OVEN BARBECUED SPARE RIBS
3 to 4 lbs. Ribs (country-style)
black pepper (season to taste)
garlic powder (season to taste)
1 lemon (sliced)
1 large onion (sliced)
1 cup ketchup
1/3 cup Worcestershire Sauce
1 teaspoon chili powder
1 teaspoon salt
2 dashes Tabasco Sauce
2 cups water
Place ribs in a large shallow roasting pan, meaty side up. (mine measures 14 x 10 1/2) Season meat with pepper and garlic powder. On each piece place a slice of unpeeled lemon, a slice of onion. Roast in a very hot oven (450 degrees) for 30 minutes.
Drain grease from meat pan. Combine remaining ingredients in saucepan and bring to a boil and pour over ribs. Continue baking in moderate oven (350 degrees) until tender, about 45 minutes to an hour. Baste ribs with sauce every 15 minutes. If sauce gets thick, add more water.
SUMMER SQUASH CASSEROLE
6 cups (2 pounds) yellow squash - sliced
1/4 cup chopped onion
1 can condensed cream of chicken soup
1 cup sour cream
1 cup shredded carrots (grated fine)
1 (8 ounce) package seasoned herb stuffing
1/2 cup butter - melted
In saucepan, bring water to boil and cook sliced squash and chopped onion for 5 minutes and drain.
Combine in large bowl, cream of chicken soup and sour cream. Stir in shredded carrot. Fold in squash and onion.
Melt butter in large skillet and mix with herb stuffing.
In casserole dish spread half of the stuffing mix on the bottom. Spoon squash mixture on top.
Sprinkle remaining stuffing over squash mixture.
Bake at 350 degrees for 25 to 30 minutes until heated through.

PISTACHIO DREAM CAKE (4 Layers)
1 1/2 cups flour
1 stick margarine, melted
1/2 cup walnuts, finely chopped
1 (8 oz.) cream cheese, softened
1 cup confectioners sugar
1 (8 oz.) Cool Whip, thawed
2 (4-oz.) packages Instant Pistachio Pudding
3 cups milk
In a small bowl; combine flour, margarine and walnuts. Spread evenly into a greased 9x13 baking pan. Bake at 350 degrees for 15 minutes and set aside to cool.
In a medium bowl; combine cream cheese, confectioners sugar and 5 Tablespoons of Cool Whip. Pour this mixture over the cooled crust layer and let set for 15 minutes.
In a large bowl, combine pistachio pudding and milk; stirring until thickened. Pour pudding mixture over cream cheese layer and chill for 15 minutes. Top off the final layer with the remaining container of Cool Whip. Refrigerate. Serve.

cinamon hard candy( its sooooooo gooooooood)
1 cup white sugar
1 cup corn syrup
1 cup water
1/4 tsp. cinnamon oil
1/4 tsp. Red food coloring
Combine sugar, syrup, and water in a sauce pan. Boil without stirring over med-high heat until it reaches hard crack stage. Use a thermometer or very cold water. I use the cold water. When you put about a teaspoon in the cold water and let it sit for 10 or 15 seconds you can take it out and it will break with a snap. Towards the end of the cooking time the mixture will thicken considerably and turn a yellowish color. It is essential to watch the pot at this point because it will burn easily and quickly. You may also stir it at this point to prevent scorching.
When done, remove from heat and quickly stir in the oil and coloring.
Pour into a 9x9 metal pan that has been lined with about 1/4 to 1/3 inch of powdered sugar.
Let cool until the edges start to firm up and then immediately begin to cut the pieces from around the edges. Keep cutting around the edges as the candy hardens. Cutting takes practice because the candy can harden quickly. Some just let it get rock hard and break it with a mallet but this makes it harder to control the size of the pieces and also the pieces have sharp edges that can cut one's mouth.

Chocolate Biscotti
1 cup flour
1/2 cup sugar (or more)
1/2 cup cocoa
2 teaspoons flavoring (I used raspberry. Orange or almond would work nicely too)
2 egg substitute
3/4 teaspoon baking powder
1/4 teaspoon salt
liquor (to match)
flavoring (I used Chambord)

Combine flour, sugar, cocoa, salt and baking baking powder.
Separately, mix flavoring and eggs.
Combine. Add splash of liquor or water as needed to have a sticky consistency.
If the mixture is too stiff, it won't spread out properly.
Put this glob on a greased cookie sheet and arrange it into a log about 15 inch es long and 1 1/2 - 2" wide. Bake at 350 for 25 minutes.
Remove from oven, let cool a few minutes, then slice diagonally into 1/2- 3/4" slices.
I got 18 pieces from mine. Place the slices on their side and put back in the oven (300 degrees) for 15 minutes.
Turn over and cook another 10-15 minutes.
If you can afford the fat, a small drizzle of semisweet chocolate is wonderful on these when cooled.
I used about 2 Tbsp. for all the cookies, which added about 6 g. fat to the recipe or 1/3 g. fat each one.

YANKEE POT ROAST, COLE SLAW AND JELLO:
Pot roast using the slow cooker
2 lb chuck roast
1 pkg lipton onion soup mix, dry
1 can cream mushroom soup, campbells
1 celery stalk, diced
1 onion, diced
2 whole carrots, peeled and cut
4 potatoes, peeled and cut in 1/4
1 crushed garlic clove
3 tbsp flour
1 Reynold's slow cooker liner, optional
The slow cooker liner makes cleaning up a snap!
In the crock pot, add the can of cream mushroom soup, a can of water, the lipton dry soup, flour and mix the ingredients well.
Add the roast and the garlic. Mix around til covered with soup mix. Add the onions and veggies. Add water to barely cover the veggies (remember the water level may go up during cooking!).
Cover and turn crock pot to med/low. Cook 6-8 hours and it will be so tender! Serves 3-4
MEXICAN COLE SLAW
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/2 cabbage, sliced and diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste
In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well. Chill for 1 hour and serve cold
JELLO DESSERT
1 pkg large jello, any flavor
coolwhip
fresh fruit
Make the jello as on the package but use 1/2 cup less water.
Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 4-6 hours. Mix up the jello and add 1/4 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.
Put the mix in a glass, and top with more fresh fruit or coolwhip.
Serves 4

Try starting with something simple. I think Beef Stir Fry is easiest, because you can buy some of the items pre-cut, etc. Start by buying flank steaks and slicing them into thin strips. Marinade in teriyaki sauce. Then in a large pan or wok heat up a small amount of seasame oil. Here add your vegetables. You can either cut up your own combination, or buy the pre-cut and cleaned mix that most supermarkets have in their produce areas. Let the vegetables begin to soften, and cover with hoisen sauce. Add beef and cook until all is tender. Serve over white rice, or mix the rice in for a quick fry with some more Hoisen Sauce at the last minute. Delicious, fast, and easy. Looks so professional people will think you've been cooking for years.

Start out simple and work your way up to the more complicated recipes...there are so many available from various websites and books; I won't attempt to send you any. If you view cooking as a pleasure instead of a chore; and if you have the proclivity for this...I bless the food as I prepare it, for I am grateful for my abundance in food...and for not going hungry. It seems to add something special to my efforts. Try some simple casseroles for starters. With each success, you will feel motivated to try new things...be creative and have fun with it...there is no right or wrong way to do it. Good Luck!

quick and delicious recipie for cake...lowfat and sugar, too.
in bottom of 9x13 pan, sprinkle brown sugar. then put pineapple slices on top of that. Empty a box of yellow or white cake mix (dry) on that. Pour a 12oz. can of diet sprite over dry mix. Cover with foil, bake 20 min. at 400 , then take foil off, continue till done and brown on top.
Different variations:
allspice on bottom , followed by peaches and cake mix...sprite
cherry pie filling on bottom, chocolate cake mix on top, followed by diet coke
enjoy!!
