Both of these recipes are awesome! My mouth is watering, I think I will go make some now...



Ginger-Lime Muffins

Makes 12 muffins

Ingredients:

shortening, for greasing
grated zest of 2 limes, plus 1 teaspoon more
1/2 cup turbinado sugar (such as Sugar in the Raw)
2 inch piece fresh ginger, peeled
1 3/4 cups all-purpose flour
1 tablespoon ground ginger
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
4 tablespoons unsalted butter, softened
3/4 packed cup dark brown sugar
2 eggs
3/4 cup buttermilk
1/4 cup, plus 2 tablespoons finely chopped crystallized ginger
1/2 cup golden raisins (optional)

Preparation:

Preheat oven to 375°F. Grease a 12 cup muffin tin with the shortening.

In a food processor, combine the lime zest from the 2 limes and the turbinado sugar. With the machine running, add the fresh ginger and process until smooth; set aside.

In a mixing bowl, sift together the flour, ground ginger, baking powder, baking soda, and salt; set aside.

In the large bowl of an electric mixer, cream together the butter, brown sugar, and the 1 teaspoon lime zest until fluffy, about 3 minutes, scraping down the sides of the bowl. Add the eggs 1 at a time, scraping down the sides of the bowl after each addition and mixing until fully incorporated, 1 to 2 minutes. Add the flour mixture in 3 additions, alternating it with the buttermilk. Mix thoroughly and scrape down the sides of the bowl between additions. Fold in the 1/4 cup crystallized ginger and the raisins, if using.

Divide the batter between the cups of the prepared muffin tin, filling each 3/4 full. Scatter a scant teaspoon of the turbinado sugar mixture over each muffin, and sprinkle with the remaining 2 tablespoons crystallized ginger. Bake until puffed and golden brown, and a toothpick inserted in the center comes out clean, about 20 minutes. Do not overbake. Let cool in the pan for 5 minutes, then transfer to a wire rack.


Mandarin Orange Muffins

1 (11 ounce) can mandarin oranges
1 1/2 cups all-purpose flour
1 3/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/2 cup sugar
1/3 cup shortening
1 egg, slightly beaten
1/3 cup milk

Topping:

1/4 cup melted butter
1/4 cup sugar mixed with 1/2 teaspoon cinnamon

Preheat oven to 350F. Drain oranges well and pat dry while mixing batter. Mix flour, baking powder, salt, nutmeg, allspice and sugar. Cut in shortening. Add drained orange segments and mix lightly.

Combine egg and milk. Add all at once to flour mixture, and mix until flour is moistened. Spoon into greased muffin pan to about 3/4 depth. Bake 20 to 25 minutes. Remove from pan. While hot, dip in melted butter, and then roll in cinnamon sugar mixture. Yield: 12 large muffins.

BLUEBERRY OATMEAL MUFFINS

3/4 c. old-fashioned oatmeal
1 c. flour
1/4 c. oat bran
1/2 c. light brown sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 c. butter
1 egg
3/4 c. buttermilk
1/2 c. chopped nuts
3/4 c. blueberries

Topping
1/4 c. brown sugar
1/4 c. flour
2 tbsp. butter
2 tsp. cinnamon

Preheat oven to 425 degrees. Mix together first 8 ingredients until crumbly, then add egg, buttermilk, nuts and berries. Mix well. Pour into greased muffin tins. Combine ingredients for topping. Mix with fingers and sprinkle over the muffins. Bake about 15 minutes. Makes 12 large or 14 medium muffins.

INGREDIENTS:

* 1 cup sliced almonds
* 2 cups all-purpose flour
* 2/3 cup white sugar
* 2 teaspoons baking powder
* 1/4 teaspoon baking soda
* 1 teaspoon salt
* 3/4 cup warm water
* 2 teaspoons almond extract
* 1/2 cup butter
* 2 eggs, beaten
* 1 1/2 cups frozen raspberries

DIRECTIONS:

1. Preheat oven to 375 degrees F (190 degrees C).
2. Arrange almonds in a single layer on a medium baking sheet, and bake in the preheated oven 5 to 10 minutes, until lightly toasted.
3. Reduce oven temperature to 350 degrees F (175 degrees C). Lightly grease a 6 cup jumbo muffin pan.
4. In a medium bowl, mix flour, sugar, 3/4 cup almonds, baking powder, baking soda, and salt.
5. In a separate medium bowl, mix water, almond extract, butter, and eggs. Blend into the flour mixture. Fold raspberries into batter. Spoon into the prepared muffin pan. Sprinkle with remaining almonds.
6. Bake 25 minutes in the 350 degrees F (175 degrees C) oven, until a knife inserted in the center of a muffin comes out clean.

Banana Apple Butter Muffins:
1pkg of banana quick bread mix
1(8oz ctn of plain yogurt)
1/2c apple butter
1c oil
1 egg

In large bowl combine bread mix,yogurt,apple butter,oil and egg;stir 50 strokes by hand, spoon into 15 lined muffin cups,bake at 400 for 15 to 20 minutes or until tooth pick inserted comes out clean.

chocolate chip. or the chocolate chip ones for $.99 at walgreens. (sometimes i get lazy with cooking around the house)
