You can make lots of things, it's about finding the right recipes. Sorbet is good once in awhile but it's all sugar. The worst part about LI is that there's a limited amount of things you can have and it gets boring. Same dairy free store bought stuff over and over. Here are some places with a decent variety of things to make, from muffins to cookies to pie, all lactose free.

Sorbet is a good substitue for ice cream. Some sherbets are made without milk, too. There are some frozen treats called Tofutti Cuties or Tofutti Fruittis that are surprisingly good usually in the healthy foods frozen section. I'll bet you could find soy milk based frozen treats and recipes as well. It's going to be all about reading labels and recipes. Most cakes, tarts, tortes, cookies and pies don't have milk ingredients so those should be able to stay on his "yes" list. Dark, bittersweet and semisweet chocolate products should be okay, too.
My niece is allergic to nuts and we've found that asking restaurant staff and checking labels is becoming the norm because so many folks more have allergies and intolerances these days. Remember that he can experiment with products like Lactaid, too. He can carry the tablets on him in case he asolutely HAS to have that real dairy rich ice cream and maybe try using Lactaid lactose free milk to make recipes that require milk.
This sounds like a time to try some new stuff and have fun with it. Just be careful and open-minded and remember, for his gut's sake, if he has any doubts he's probably best to pass on it.

My boyfriend is lactose intolerant. I am too plus I am allergic to eggs. Severely limits our options.
-Sorbet is good
-Some soy ice creams can be good, I like mocha with chocolate ice cream
-Frozn berries with sugar
-There are some decent vegan cookies out there. I do not remember the brand off the top of my head.
I can't think of anything else. But look at it this way, no desert can be a good way to not gain unwanted weight!

You can make your regular recipes by just substituting Toffuti brand items. They make sour creme, cream cheeses, frozen ice cream etc. And it's all certified lactose free.
