I don't like boxed mixes as a rule either, though they do have their uses. Here is a simple recipe for cornbread that I think you'll enjoy:

1 cup cornmeal
1 cup all-purpose flour
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
2 eggs
1 cup milk
1/4 cup soft shortenning (I use butter-flavored)

Sift together all dry ingredients. Add the rest of the ingredients and beat just until smooth. Bake in a greased 9x9x2 pan at 425 degrees for 20 to 25 minutes.

As a note, this recipe will work for cornbread muffins too, except you want to bake them only for 14 minutes.

Happy baking!
