Use component video cables for video.
Use coax digital cable or fiber audio cable.
You will get very good quality with this solution.

Yes, in principle but note that if a DVD is copy-protected, the DVD player will NOT output anything but 480i on the component outputs. Since almost all movies are copy protected, this means that upconversion is almost useless unless you have an HDCP compliant HDMI input. There are no converters for HDMI to component, as this would alllow bypass of the copy protection.

Depends on which kind of dvd player you get. Most upconversion dvd players will only output in 480p via component. The LG will upconvert through component though. I'ld suggest getting that one. I have the samsung upconversion from last year, and the LG upconversion from last year. The samsung won't. The LG will.

yes. you can get Component cable to DVI cable. DVIGEAR customs makes cables and can help with your application. That way you can hook up your systems. The only downside is your HD dvd player will not be playing true HD without DVI or HDMI digital signal. The good news is Componet connections (analog) do allow for HD signals that look almost as good as digital depending on your television. I would call DVIGEAR in the morning. They can help work our your problems.
