You need at least 2. One for your hair type that you can use everyday, and another to clarify or to get out styling products (use whenever your hair is feeling extra flat/dirty) and of course a conditioner.
I have similar hair and I use 3:
Dove
Suave (Clarify)
Pantene (Color)
If you can afford it anything from Amplify.

It depends.. your hair is thick but not coarse. This isn't enough to go on. Is it straight, is it curly, is it colored. Does it feel dry. Does it look flat? These are all questions that need to be answered when determining a shampoo. How you style it also.. do you blow dry or curl or straighten it.
Go to a salon and ask them. They can actually see your hair. They can ask you all the questions I just did and make a decision based on these.
