When one examines their heart in light of the Holiness of God and sees how far short we are of the glory of God then one sees the need for a righteousness outside of themselves. Then as we see how even our best works are tainted with sin and pride we mourn the fact that we can't escape the effects of sin in this life. We strive but fall short. We seek to do good and find we are weak. Also sometimes we think more highly of ourselves then we ought and God withdraws His grace for a time and we seem so far from Him.
It is these things that cause us to hunger and thirst for that perfect righteousness that is in Christ. We tried and failed to produce our own and found it not acceptable before the face of God. We flee to Christ, trust in Him and long for the day in which He will make us righteous . Till then we hunger and thirst for it more and more as we taste of it now and see how sweet the grace and mercy of our Savior is.

The number one way I trigger hunger and thirst for righteousness is by taking up my cross daily and walking after Jesus Christ. In other words, I purposefully place myself into situations where I have to deny what I want and instead do what He wants me to do.
For example, after work today, I noticed it was 88 degrees; I really didn't feel like evangelizing as I usually do when the weather isn't too extreme. It's been in the upper 90's and low 100's here, so I haven't been able to do this for a while. So my flesh wanted me to go to my car as usual after work. The closer I got to my car, the more convinced I was that the best thing would be to just go home. So I paused, took up my cross, turned around and spread the gospel in the city neighborhood where I work. I was sweaty afterward, but I had the best time I'd had in a while. Boy, was I hungry and thirsty for His truth as I went about the Father's business! And it all happened because, as you say, I emptied myself and permitted Him to fill me!

How can I explain it?
Have you ever been or seen a jr.high or High school kid take to a subject, that is goes far beyond the scope of the class because they want (more of a NEED) to know all they can about that subject. The thirst for knowledge.
The bible holds ever so many secrets that can be unlocked, and when you begin unlocking (getting passed the Jesus Saves level) you find you can't get enough and you thirst for more.

I long for a day when people will no longer be trapped by patriarchal ideologies that are fraught with bloodshed, destruction, cruelty, and hypocrisy. I hunger for the day when the world will turn back to the Goddess of Life and away from the god of destruction, human sacrifice and blood. I honor the ancient ways of the Goddess by honoring the Earth, by treading gently on her life-giving body. I honor the Goddess and the cycles of life and the moon, by honoring myself and my feminine lunar cycles and life-giving powers of motherhood. I thirst for the truth to emanate from the highest mountaintop -- you have no need to fear! The Earth will give you life, as long as she is respected! Break the shackles of false religion and remember what it means to be human!

It's when you want God's will more than your own. When you want Christ to change every character defect in you. When the sight of someone in pain or troubled causes you to hurt in empathy with them. When you stop blaming your circumstances and start asking the Holy Spirit for conviction. When possessions become tools to help spread Christ's message instead of milestones by which you measure your life. When others see the light of God's love shine through you in your face, your actions and your words.
