I LOVE to cook so...and love to eat...so here's a few things I can make that also are healthy if you make them correctly, even the fried plaintains.
a Crisp salad with plenty of fresh veggies and fresh greens/lettuce (no Iceberg lettuce but some kind of field or baby greens or spinach); a baked potatoe (white or sweet); arroz amarillo (yellow rice); baked Macaroni and cheese; Platanos fritos (fried plaintains); fruit salad (with plenty of kiwi, grapes, mango, watermelon and other fruits); brocoli, cheese, rice casserole;

Depends on what I'm having. Fried chicken/ribs I like cole slaw or potatoe salad. Chili I like cornbread. Beef stew is good crusty bread, Pasta is garlic bread and veggie strips.
