750 g ripe, soft apples (26-1/2 oz)
cinnamon
2 tbs sugar
butter
breadcrumbs
100 g raisins (3-1/2 oz)
grated lemon peel and/or a few finely chopped nuts
butter or egg yolk


Directions:
Cut the apples into very thin slices and stew them for a minutes with the sugar and the cinnamon. Brush the Strudel dough with some melted butter and sprinkle it with breadcrumbs. Spread the apples and the raisins evenly on top of it. If desired add some chopped nuts and/or grated lemon peel. By lifting the cloth on one side, roll up the Strudel. Let it slide from the cloth onto a buttered baking sheet. Brush the Strudel with some melted butter or egg yolk. Depending on the size it should bake for 30..40 minutes in a fairly hot oven (200xC/400xF). For an extra moist Strudel one may pour 125..250 ml (4-8 oz) of milk onto the baking sheet.

1/4 cup fine dry breadcrumbs

1 teaspoon ground cinnamon
5 large tart apples, peeled cored,and thinly sliced (such as granny smith)
1 tablespoon lemon juice
1/4 cup raisins
1 cup finely chopped walnuts
1 tablespoon confectioners' sugar, for dusting baked strudel

Find a German bakery and buy it. Stretching strudel pastry is a nightmare.

PEEL AND SLICE APPLES,THEN TOSS WITH LEMON JUICE.MELT 1/2 STICK OF BUTTER AND SAUTE APPLES,ADD IN ABOUT 1/4C OF SUGAR,COOK ON A MEDIUM HIGH HEAT UNTIL APPLES START TO BROWN AND A SYRUP STARTS TO FORM,AND APPLES ARE TRANSLUCENT.REMOVE FROM HEAT AND ADD IN CALVADOS,TILT PAN A LITTLE TO IGNITE ALCOHOL TO BURN,LET FLAMES DIE DOWN,ADD IN CREAM,TURN OFF HEAT,PLACE ON SHEET PAN,PLACE IN FRIGE TO COOL DOWN.REMOVE FROM FRIGE ADD IN WALNUTS AND RAISINS,TASTE TO MAKE SURE YOU HAVE ENOUGH SUGAR.LAY OUT A SHEET OF DOUGH,BRUSH WITH CLARIFIED BUTTER,SPRINKLE W/BREAD CRUMBS,YOU WANNA DO THIS 3 TIMES,THEN LAYER ON SOME OF THE APPLE FILLIN',PLACE ANOTHER SHEET OF DOUGH,AGAIN BRUSH W/ CLARIFIED BUTTER,SPRINKLE CRUMBS,YOU GONNA DO THIS AGAIN 3 TIMES.ON THIRD LAYER ADD APPLES.YOUR GONNA DO THE SAME PROCESS UNTIL THE DOUGH AND APPLES ARE FINISH.ROLL UP TIGHTLY,BRUSH OUTSIDE W/BUTTER,PLACE ON A SHEET PAN W/WAX PAPER,BAKE @350* FOR ABOUT 45MINUTES UNTIL GOLDEN BROWN.LET COOL SERVE W/TAHITIAN VANILLA ICE CREAM.
