Here is my simple, tasty recipe:

2 lbs ground beef
1 cup prepared stovetop stuffing (any flavor)
2 eggs
1 tbs meat tenderizer
1/2 cup seasoned bread crumbs
1/2 cup prepared minute rice (any cooked rice will do)
2 cups of mild salsa (or spicy if you like that)
shakes of salt, pepper, garlic powder
mix it all together, using only 1 cup of salsa in the meatloaf, the rest of it on top of it so that it bakes nicely until cooked through (425 degrees for 1 hour, 15 minutes or so).
I like to make it cook a little longer so the outside edges are crispy.

This will make 2 loaf pans. Cook them both, stick one oin the freezer if you don't eat it. Makes a nice easy dinner later!

Serve with Mashed potatoes!

Well personally I got tired of the same old meatloaf. I like this one

2 1/2 lbs ground beef
3/4 cup seasoned bread crumbs
1 egg
1 pack dry onion soup mix
1 tbsp Worchesire sauce
1 can mushroom soup

Mix all ingredients except mushroom soup until well blended.

Bake at 400 degrees for 40 minutes. Top with mushroom soup bake an additional 5 minutes.

2 lbs Ground chuck
1 Large onion, finely chopped
1 cup Breadcrumbs
2/3 cup Chili sauce or ketchup
2/3 cup Parsley, finely chopped
1 tb Worcestershire sauce
3 Eggs, lightly beaten
1 tsp Salt
1/2 tsp Black pepper

Preparation
Preheat oven to 350. Combine all ingredients in a large bowl and mix with your hands until well-blended but not overmixed.

Fill lightly greased 9 x 5 inch loaf pan with mix. Put pan on baking sheet and bake until meat is firm and has shrunk from the sides of the pan, about 1 1/4 hours. Pour off excess fat and let sit 15 minutes.

Cook's Notes
Serve this American classic with baked or mashed potatoes, a green vegetable such as broccoli or green beans, and sliced tomatoes. Meatloaf sandwiches the next day are almost better.

1 small onion
2 cloves garlic
1 T. oil
1 teasp. dried thyme
1/3 cup milk
1 egg
1/2 ketchup
1/2 cup bread crumbs
11/2 lbs ground veal, pork, beef (or your choice)
Chop onion & mince garlic. Heat oil in a large frying pan. Add onion and cook until soft, about 5 minutes. Add garlic & thyme, cook 1 minute. Combine milk, egg & 1/4 cup of the ketchup. Stir in bread crumbs, season with salt & pepper. Crumble in meat and add onion mixture. Stir. Shape into loaf, spread with remaining 1/4 cup ketchup. Bake until browned, about 90 minutes. Let stand about 10 minutes before slicing for moistest meatloaf. I always put a few slices of bacon on top. I am not fond of meatloaf, but this is a great recipe.

OK here's mine:

1lb of ground beef (or 2lbs. if you are feeding more than 4)
1 raw egg (per lb. of meat)
crushed crackers (approx 1/2 cup per lb. of meat)
1 tbsp of Worcestershire sauce
1/4 cup of finely chopped onion

Mix together and shape into a loaf pan

Bake at 375-400 degrees (ovens differ) until done (about 45 minutes to an hour)

Serve with optional catsup, salt and pepper to taste

You've got it all already except 2 eggs and an onion chopped. Bake it at 350 for about an hour maybe an hour and a half. Best wishes

Hamburger
One sleeve of crackers
2 eggs
onion
milk
salt / pepper

In a large bowl, crumble the crackers, add the eggs and about one half cup milk and mix well. Add chopped onion, to your taste, salt and pepper and mix well. Place strips of bacon on top and bake at 350 for 45 to 60 minutes. Check for doneness by inserting knife into the center and looking for any raw meat, cook completely.
