Usually what they grew up with.
Cats are more independent and are a better fit for single people with a busy lifestyle and long hours at work. Cats are cheaper and better suited to apartment lifestyle. Cats are less scary. Cats need less investment.
Dogs are more dependent, need more time and attention, and require more space. Dogs are more attached to their owners and are usually more interactive with them. Dogs are more expensive. Dogs are more dangerous.
One thing to note is that dog people often have cats too, but you rarely hear of a cat person having dogs too. (From Coren book below)..
I personally think there is an economic aspect to it: single people (including often single moms) with busy working lifestyles and apartments (less money) are more likely to have cats than dogs. Families with more time to take care of a dog (care can be divided), more money or multiple incomes, houses, etc will often have dogs.

I think it depends on how responsible someone is. Its a lot easier to take care of a cat, they go the bathroom in a box, all you have to do is feed them clean the box and take them to the vets once in a while. Dog are a lot more work. But its worth it. It just depends on how much time someone thinks is okay to devote to an animal.

It's stereoptypical but: CAT-independant, self-confident, "easy for maintanance" DOG-loyal,guardian,"higher maintanance"...people are usually seeking diffrent things from these two, but nevertheless, both are great companions and there are people who lives with both animals and loves them all.

I think it depends on the person personality. Dogs think that they belong to their owner. Cats think their owners belong to them.
