My oven roasts at 300 degrees and the book says 35 minutes per pound for medium.

Depends on the weight of the roast. I usually cook mine around 45 minutes to 1 hour per pound on 325, and the meat is still usually lightly pink in the center. If you have a pressure cooker, it will cut your time almost in half. Make sure you place some water, or beef broth in the roasting pan, so nothing dries out. You will want to check it often as well. Baste it with the broth every hour to keep it moist. You can cook your new potatos, carrots, and onions in the pan as well with it. It is a slow process, but well worth it.

if you turn it down to 200 you can cook it slow and longer and it will turn out real juicy and tender. . . do this. . .braise your seasoned meat first. (that means cook it in pan on all four sides on really high heat to seal in juices.) put in a roasting bag with potatoes, onions and carrots and gravy mix. cook on 200 degrees for up to 3 1/2 hours or until 160 degrees in center. now enjoy!!!

if under 3 pounds and thawed, 2 hours for well done. each additional pounds roughly 1 half hour a pound.
