Mexican is my favorite kind of food, so I've tried tons of taco/enchilada/tamale casseroles. They're not spicy at all, and my god daughter loves them! Hope one of these works for you :)
Layered Mexican Casserole
1/2 lb. ground beef
1 can (11 oz.) whole kernel corn, drained
1-1/2 cups TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
1 cup BREAKSTONE'S or KNUDSEN Cottage Cheese
1 container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream
5 cups tortilla chips, divided
1-1/2 cups KRAFT Shredded Cheddar Cheese, divided
PREHEAT oven to 350°F. Brown meat in large skillet; drain. Add corn and salsa; mix well. Cook until heated through, stirring occasionally. Set aside. Mix cottage cheese and sour cream.
LAYER 2 cups of the chips, 1/2 of the meat mixture, 3/4 cup of the cheddar cheese and 1/2 of the cottage cheese mixture in 2-quart casserole dish. Repeat layers of chips, meat mixture and cottage cheese mixture.
BAKE 35 minutes. Insert remaining chips around edge of casserole; top with remaining 3/4 cup cheddar cheese. Bake an additional 10 minutes or until cheese is melted.
Tamale Casserole
1 lb. ground beef (95% lean ground chuck)
1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
1 cup canned black beans, drained, rinsed
1 Tbsp. chili powder
1 tsp. garlic powder
1-1/2 cups water
1/2 cup CREAM OF WHEAT Cereal (1-minute, 2-1/2-minute or 10-minute cook time), uncooked
1/2 cup KRAFT 2% Milk Shredded Reduced Fat Sharp Cheddar Cheese
1 can (4 oz.) chopped green chilies
2 egg whites
BROWN meat in large skillet on medium heat; drain. Add salsa, beans, chili powder and garlic powder. Simmer on low heat 5 minutes. Spread on bottom of 8-inch square baking dish; set aside.
BRING water to boil in medium saucepan. Sprinkle in cereal, stirring constantly to prevent lumps; cook 1 to 3 minutes or until thickened, stirring occasionally. Remove from heat; stir in cheese, chilies and egg whites. Spread evenly over meat mixture.
BAKE at 350º F for 20 to 25 minutes or golden brown. Serve warm.

Got good at making this in college.
Brown your ground beef and add a pack of taco seasoning and water like the directions show.
Get out a big iron skillet or a baking dish and put some taco sauce in the bottom to cover it. Then lay on corn tortillas to cover like you would with lasagna. Put more taco sauce over them, just to get them wet but not sloppy. Then put on a layer of shredded Mexican cheeses, some chopped onions half of the taco meat. Repeat that one more time. Then cover the whole thing with a lot more cheese.
Bake it in the oven for about 40 minutes on 350 so that all the cheese melts and gets really bubbly.
When it's done, let it sit a couple of minutes so that you don't burn your mouth. Cut it into big squares or wedges and put a glob of sour cream, some salsa or corn/bean salsa with it, and a big plate of Spanish rice and refried beans. It's awesome and feeds 4 really hungry guys for 2 days.
I don't know what you'd call it but we called it Mexican lasagne.

Ok...you will need the following ingredients:
1) tortilla chips
2) 2 cans of cream of chicken soup
3) butter or margarine
4) onion and red pepper (I omit this for my little ones)
5) 2 cans of RoTel....if this is too spicy, you can use canned tomatoes
6) chicken, cooked and cut up
7) shredded cheddar cheese (or cheddar jack)
If you use the onions and peppers, saute them in butter in a large saucepan. Add the soup, RoTel, (or tomatoes) and the chicken and heat through. Place crunched up tortilla chips on the bottom of a 9 X 13 pan. Pour soup mixture over that, then sprinkle cheese on top. Continue to layer like this until you've used up all your soup mixture (I can sometimes get 3 layers). Bake this at 350 degrees for 30 -45 minutes or until bubbly. Very tasty.

This is an easy one, sorry but I don't measure so much. eyeball it!
Line the bottom of a cassarole pan with tortilla chips.
(a couple layers)
Ad a couple cans of refrieds,
add a layer of chz
add some onins chopped up as a thin layer
add some cooked groiund beef
add some more cheese
sprinkle on the beef, green peppers & onions,
then crunch not crumble some tortilla chips add to top.
Then a can or 2 of enchilada sauce. (Pour on top)
350 for 30-40 mins,
top w/ tomatoes raw onions, blk olives, lettuce and sour cream.
Dang I made myself hungry!

Making it NON spicy will be a little tricky - you will either need to get very mild chili seasoning or adapt one of the recipes that you have found online. My recipe is very hot & spicy so I don't want to pass it on to hurt your little ones, but basically, brown ground beef with taco seasoning, place in cassarole dish, crumble corn chips, cheese, whole kernel corn and canned beans (pinto with the juice) and bake till hot and bubbly. I wish I had a nice mild one, but I personally don´t know of any seasonings that could replace the ones I use.

um the other night i had tried a recipe what i did was take the meat brown it get you some toco salsa mix in with the meat as soon as you drain it! put that in the bottom of a dish layer that with tomatoes,lettuce,sour cream,onions,cheese,refried beans.....more or less of the toppings that you yourself choose and then bake in the oven on 350`until you think that it is warm...then what i did was get me some tortila chip and mixed them in the casserole kinda like a toco salad or either layer the bottom of the pan with the tortila chips before you put the beef mixture in there but i didnt like it that way because the chips kinda got a little soggy. but this is a really good recipe try and let me know how you like it!!!!!!!!!!

MEXICAN LASAGNA:
1 small bag of soft taco or burrito shells
3 cans of refried beans
1 1/2 pounds of hamburger
2 bags shredded cheddar cheese
1 bottle of salsa
chopped onion, bell pepper (optional)
Brown hamburger meat with onions & peppers.
Cut shells in half and place on bottom of dish.
Alternate layers of beans, meat, salsa & cheese, repeat until pan is full. Add extra cheese on top. Cover & bake at 350 for 30 minutes.

This recipe is one that I made up for a friend of mine who is cooking impaired so she'd have a "covered dish" to take to a neighborhood function when she moved to San Antonio, TX. It was SO popular that she submitted it for publication in a fundraiser cookbook for her daughter's elementary school and it's been receiving kudos ever since. Her husband loves it, and he doesn't eat spicy food :)
Taco Casserole
1lb ground beef
1 (16-oz) can diced tomatoes
1 pkg. (8-in) corn tortillas
1 pkg. taco seasoning
3/4 cup water
1 pkg. shredded lettuce
2 c. shredded cheddar cheese
sour cream (optional)
1 fresh tomato, chopped
Brown ground been in large skillet. Drain fat. Add canned diced tomatoes. Stir in taco seasoning and water. Simmer 5 minutes. Spray an 8-in square baking dish with cooking spray. Place 1 corn tortilla in dish; cover with 3-4 tablespoons of meat mixture. Sprinkle with cheese. Top with another tortilla and continue layering meat/cheese/tortillas (as you would for lasagna) until baking dish is full, ending with meat and cheese on top. Bake at 350 for 30 minutes or until bubbly. Top with shredded lettuce, more cheese, fresh tomatoes and garnish with sour cream (if desired.)

Really yummy!! Not your traditional taco salad. I know...french dressing....weird. But it really gives it a good interesting taste.
Taco Salad
1 big bag Doritos
2 C. shredded Cheddar cheese
1 pkg taco seasoning
1 lg. bottle of french dressing
1 lb ground meat (i use turkey)
1 lg can re-fried beans
lettuce
toppings: sour cream, black olives, diced tomatoes, onions,salsa
cook meat, add seasoning according to package, add re-fried beans and dressing.
mix the rest of the ingredients together and top with the toppings of choice.
my family of 6 love this recipe. my 4 kids like to add their own toppings.
