I really think you should pick up this great book by Rachael Ray. All of her meals are quick *all done in 30 minutes,* tasty, easy, and cheap! My brother LOVES this book because its dedicated just to "guy food."

Sausage, Pepper & Onion Subs:
4 cooked chicken sausages, available at your meat counter -- get a Mediterranean flavor, such as pepper and onion or sundried tomato and basil
3 tablespoons extra-virgin olive oil, divided
1/3 cup chicken stock or dry white wine, a generous douse
1 cubanelle pepper, seeded and sliced
1 red bell pepper, seeded and sliced
1 large onion, thinly sliced
3 cloves garlic, chopped
Salt and pepper
1 cup giardiniera (Italian pickled vegetable salad: hot peppers, cauliflower, carrots and celery mix available in jars on Italian food aisle or in bulk bins near olives)
Handful Italian flat-leaf parsley leaves
1/2 cup fresh basil (10 leaves)
1/2 a lemon, zested (2 teaspoons)
4 crusty sub rolls, split
Prick sausages with a fork. Place chicken sausages in a large skillet and add 1 inch of water. Add 1 tablespoon extra-virgin olive oil to the skillet, 1 turn of the pan. Bring water to a boil, then reduce heat a little. Allow all the liquid to cook away, then brown and crisp the casings, 5 to 6 minutes. Deglaze the pan with stock or wine and cook it off, 1 minute. Remove sausages to a platter.
While sausage cooks, slice the peppers and onions and prepare the garlic. Once the chicken sausage comes out of the pan, add 2 tablespoons extra-virgin olive oil, 2 turns of the pan. Add veggies and garlic, season with salt and pepper and cook 10 minutes.
Place the giardiniera, parsley, basil and lemon zest in the food processor and grind into a relish.
Slice sausages on an angle. Fill each roll with a little relish, then peppers and onions then the sliced sausages.
Chili Dog Nachos
1 tablespoon vegetable oil, 1 turn of the pan
1 pound ground sirloin
Salt and pepper
2 hog dogs, sliced into 1/2- inch pieces
1 small onion, chopped
2 teaspoons Worcestershire sauce
2 tablespoons chili powder
2 teaspoon ground cumin
1 (8-ounce) can tomato sauce
1 sack yellow corn tortilla chips
1 sack, 10 ounces, shredded yellow Cheddar
Sour cream, garnish
Salsa, garnish
2 scallions, chopped
Heat a medium skillet over high heat. Add oil then beef, and begin to brown and crumble with a wooden spoon, about 2 minutes. Season with salt and pepper, then add chopped hot dogs and continue browning, another 3 minutes. Add onions and seasonings, Worcestershire, chili powder, and cumin. Cook another 3 to 5 minutes. Add tomato sauce and simmer 5 minutes more.
Preheat broiler.
Arrange corn chips on a platter or in a casserole dish. Top the chips with the cooked chili dog topping. Cover the chili dog sauce with cheese. Melt cheese under hot broiler, 2 minutes, until melted and bubbly. Garnish with sour cream, salsa and chopped scallions.

Cheez-it Chicken
1. Dip chicken breast in melted butter
2. Bread chicken with crushed up cheez-it's
3. Insert a slice of velveeta cheese in the middle and role up
4. Add to a round glass pan
5. Cook for 45-60 minutes at 325 degrees
Serve with steamed rice and corn.

Well, I believe you can freeze any soup, so it can be made ahead of time and its really nutritious when you make it yourself with fresh ingredients. You can also roast a big chicken, eat what you want for that night and then take all the meat off bones and put in refridgerator and use later in things that are quick to make like casseroles, they are great cause you can put everything together in one meal and put in oven. Tacos are something that are quick and easy, you can do all the prep work of cutting up the lettuce and tomatoes in the morning and put in baggies and it only takes 10 min or so i think to make the meat at night if you have a sauce packet.

Chicken Rice Bake
In a baking dish mix together cream of mushroom soup with 1 1/3 cup water. Add in 1 cup of rice. Put 2-4 boneless chicken breast on top bake at 400 for 40 minutes. This is my husbands favorite.
Another is mac cheese with canned tuna or chicken (sounds gross to me but my husband swore by it before we were married).

MAGDALINAS VALENTINE CHICKEN
4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount
flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.
Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.
Drain and remove excess grease from skillet.
Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.
Simmer on medium heat till onions are soft.
